½ cup sliced almonds
6 slices cooked bacon, crumbled

4 oz. pkg. long grain and wild rice mix
1-3/4 cups water or chicken broth
2 cups frozen broccoli florets
1-1/2 cups cubed cooked ham
1/3 cup grated Parmesan cheese

  • In a large skillet, melt olive oil over medium heat and cook onion until tender, stirring frequently. Add rice from mix and cook for 2 minutes, stirring frequently. Add water and contents of seasoning packet from the rice mix; mix well. Bring to a boil, then reduce heat to low, cover the skillet, and cook for 10 minutes, stirring occasionally. Stir in broccoli and ham. Return mixture to a boil, then reduce heat again to low, cover, and cook 10-15 minutes until rice is tender, stirring frequently. Stir in Parmesan cheese and serve.

2 cups cooked ham, Diced (I often use pre-packaged ham as a timesaver)
1 (10 ounce) package frozen broccoli florets
2 (10 ounce) cans broccoli cheese soup or 2 (10 ounce) cans cream of broccoli soup
1/2 cup milk
1 cup cooked white rice or 1 cup brown rice
1/4-1/2 cup onion, chopped Fine (or to taste)
1 cup cheddar cheese, shredded
1/4 teaspoon garlic powder
1/4 teaspoon pepper
1/4 cup plain breadcrumbs
1/4 cup grated parmesan cheese
1/4 cup butter, softened

  • Preheat oven to 350'.
