HAM CHOWDER

Ham Chowder image

I made the recipe up with leftovers I had one day. It's a ham and potato based soup with leeks, onions, rosemary, cream, bacon, and carrots. The ham and bacon give this soup a smoky taste while the cream gives it a rich texture. Chowder is better served the next day.

HAM AND CORN CHOWDER

Ham and Corn Chowder image

My mother is an excellent cook who rarely follows a recipe exactly. My two sisters and I do the same thing, adding something here, omitting something there. With this soup, I sometimes leave out the bacon and butter, and have used canned corn and creamed corn with good results. We like to eat this soup with big soft hot pretzels instead of crackers. -Sharon Rose Brand, Stayton, Oregon

CREAMY HAM AND CORN CHOWDER

Creamy Ham and Corn Chowder image

This is a recipe I came up with a few years ago when I had a leftover ham bone from dinner, and it's wonderfully tasty. Good for using the leftovers after Christmas or Easter dinners. Serve with good, crusty bread and be ready to provide seconds. :)

Provided by Julesong

Categories     Chowders

Time 50m

Yield 4 serving(s)

Number Of Ingredients 10

1 ham bone, with at least 1 cup of meat remaining on bone
water, to cover
4 tablespoons butter
4 tablespoons flour
2 cups milk (whole milk preferred)
1 1/2 cups frozen corn or 1 (15 ounce) can corn
1 tablespoon dried onion flakes or 1/4 cup freshly minced onion
1 -2 clove garlic, minced
salt and pepper, to taste
paprika, to taste

Steps:

  • On a firm non-breakable surface, take a clean hammer and crack the middle of the ham bone so that marrow can escape during cooking.
  • Place ham bone flat in the bottom of a pot and add enough water to just cover.
  • Simmer over medium heat for 30 minutes.
  • Remove bone and cut off the remaining tender ham meat; set meat aside.
  • Turn up the heat on the ham broth and reduce down until you have about a couple of cups of broth, or to desired strength.
  • Skim the fat from the broth.
  • Melt butter in a large pan; remove from heat and mix in flour until smooth.
  • Slowly add 1 cup milk, stirring constantly.
  • Return pan to stove and cook on low heat until milk thickens.
  • Stir the corn, the ham pieces you set aside earlier, dried minced onion, and minced garlic into thickened milk; then slowly stir in the remaining milk and the ham broth.
  • Cook on low for about 15 minutes, but do not boil.
  • Add salt, pepper, and paprika to taste.
  • *Note: how much meat you leave on the bone is up to you, but I like to have a couple of cups of ham bits mixed into this chowder.
  • Optional: you can add a cup of cooked, chopped potato chunks to the soup near the end of the cooking, if you like.

ELWOOD'S HAM CHOWDER

Elwood's Ham Chowder image

This recipe is courtesy of Donald Barickman; it was created with and named for his father, Elwood.

Provided by Martha Stewart

Categories     Food & Cooking     Soups, Stews & Stocks     Soup Recipes

Yield Makes about 5 quarts

Number Of Ingredients 13

1 tablespoon vegetable oil
1 pound Virginia ham, cut into 1/2-inch pieces
2 large onions, cut into 1/2-inch pieces (about 3 cups)
4 garlic cloves, thiny sliced
2 bunches collard greens (about 1 pound), stems discarded, washed, and roughly chopped
1 can (28 ounces) whole tomatoes with juice, roughly chopped
7 cups homemade or low sodium canned chicken stock
2 cups homemade or low-sodium canned beef stock
8 medium red potatoes, cut into 1/2-inch cubes (about 6 cups)
1 1/2 tablespoons chopped fresh thyme leaves
1 1/2 tablespoons chopped fresh flat-leaf parsley
Coarse salt and freshly ground pepper
Hot-pepper sauce, such as Tobasco (optional)

Steps:

  • Heat the oil in a large stockpot over medium-low heat. Add ham, and cook until it starts to release juices, about 2 minutes; do not brown. Add onions and garlic; cook, stirring occasionally, until soft, about 10 minutes.
  • Working in batches, if necessary, so as not to overcrowd pot, cook collard greens, tossing frequently with tongs until thoroughly wilted. Add tomatoes and juice, chicken and beef stocks, potatoes, thyme, and parsley. Bring to a boil, and reduce heat to a gentle simmer; cook, stirring and skimming any foam from surface occasionally, until potatoes are easily pierced with a paring knife, 30 to40 minutes. Remove from heat; season with salt, black pepper, and hot-pepper sauce, as desired. Serve hot.

Tips:

  • Use a good quality ham bone. The flavor of the chowder will depend on the quality of the ham bone you use. Look for a ham bone that is meaty and has a good amount of marrow.
  • Simmer the ham bone for a long time. The longer you simmer the ham bone, the more flavor will be released into the chowder. Simmer the ham bone for at least 2 hours, or up to 4 hours.
  • Add vegetables to the chowder. Vegetables add flavor, texture, and nutrients to the chowder. Some good vegetables to add to ham bone chowder include potatoes, carrots, celery, and onions.
  • Season the chowder to taste. Add salt, pepper, and other seasonings to taste. You can also add a splash of white wine or cream to the chowder for extra flavor.
  • Serve the chowder hot. Ham bone chowder is best served hot, with a side of crusty bread or crackers.

Conclusion:

Ham bone chowder is a delicious and easy-to-make soup that is perfect for a cold winter day. With its rich flavor and hearty ingredients, ham bone chowder is sure to warm you up from the inside out. So next time you have a ham bone leftover, don't throw it away! Use it to make a delicious pot of ham bone chowder.
