1/2 cup black beans, cooked (can use canned)
1/8 teaspoon salt
1 cup rice, cooked & cooled (left-over is great)
1 medium onion, chopped
1/2 green pepper, chopped
1 cup ham, diced (can use more)
1 bay leaf
2 tablespoons oil

Steps:

  • Preheat oven to 350*F.
  • Saute onions, green pepper, ham, bay leaf and 1/8 teaspoonful salt in oil. In large casserole, place drained beans, rice and onion/ham mixture. Toss lightly together. Cover and bake for 30 minutes or until thoroughly heated.

1-1/2 c diced ham
1/2 c diced yellow onion
2 c white rice
4 c chicken broth
2 clove garlic
3 Tbsp olive oil
2 Tbsp chili powder
1 can(s) black beans-rinsed/drained
1 can(s) diced tomatoes

Steps:

  • 1. In a deep Skillet, heat olive oil at med heat. Add diced onion and diced garlic. Stir until onion is clear, and garlic is fragrant. Toss in diced Ham. Stir.
  • 2. Reduce heat, and add drained beans and canned tomatoes. Stir in Chili powder, add salt to taste. Bring up the heat to med. Cover. Cook to reduce liquid.
  • 3. Add in Rice. Stir. Slowly add in chicken broth. Heat skillet to boiling, then reduce to a simmer until liquid is absorbed. As soon as that happens, sprinkle with shredded cheese of your choice. cover until cheese has melted.

1/2 cup chopped red or green bell pepper

2 cups cubed fully cooked ham
2 teaspoons chili powder
1 1/2 cups Original Bisquick™ mix
1/3 cup cornmeal
2/3 cup milk
1/2 cup shredded Cheddar cheese (2 ounces)

  • Heat oil in 4-quart Dutch oven over medium heat. Cook onion and bell pepper in oil, stirring occasionally, until tender. Stir in beans, ham and 1 teaspoon of the chili powder. Heat to boiling; reduce heat to low.
