2 teaspoons olive oil
3 garlic cloves, minced
3 cans (15 ounces each) cannellini beans, rinsed and drained, divided
1/4 teaspoon pepper
1 carton (32 ounces) vegetable or reduced-sodium chicken broth
4 cups chopped fresh spinach (about 3 ounces)
1/4 cup thinly sliced fresh basil
Shredded Parmesan cheese, optional

Steps:

  • In a large saucepan, heat oil over medium heat. Add garlic; cook and stir until tender, 30-45 seconds. Stir in 2 cans of beans, pepper and broth., Puree mixture using an immersion blender. Or puree in a blender and return to pan. Stir in remaining can of beans; bring to a boil. Reduce heat; simmer, covered, 15 minutes, stirring occasionally., Stir in spinach and basil; cook, uncovered, until spinach is wilted, 2-4 minutes. If desired, serve with cheese.

Hearty ham and bean soup. Easy to make and a great way to use a leftover ham bone. This soup also has lots of mixed vegetables.

1 pound dry great Northern beans
8 cups water
½ teaspoon salt
1 ham hock
1 cup chopped carrots
½ stalk celery, chopped
1 cup chopped onion
1 teaspoon minced garlic
1 teaspoon mustard powder
2 bay leaves
2 cups chopped ham
½ teaspoon ground white pepper

Steps:

  • Rinse the beans, sorting out any broken or discolored ones. In a large pot over high heat, bring the water to a boil. Add the salt and the beans and remove from heat. Let beans sit in the hot water for at least 60 minutes.
  • After the 60 minutes of soaking, return the pot to high heat and place the ham bone, carrots, celery, onion, garlic, mustard and bay leaves in the pot. Stir well, bring to a boil, reduce heat to low and simmer for 60 more minutes.
  • Remove ham bone and discard. Stir in the chopped ham and simmer for 30 more minutes. Season with ground white pepper to taste.

This is a recipe I found when I was on Weight Watchers and liked it enough to keep making it even when we weren't counting points. A good comforting soup for chilly days.

2 cups cooked ham
olive oil
1 onion, chopped
2 carrots, chopped
1/2 teaspoon dried sage
1 can white kidney beans, drained and rinsed (about 19 oz.)
1 1/2 cups chicken stock (I make mine from bouillion cubes.)
2 cups water
1 bag fresh spinach (or 1/2 pkg frozen)

Steps:

  • Brush very large non-stick saucepan with oil, saute ham, onions, carrots and sage over medium heat for about 5 minutes or until veggies are mostly cooked.
  • Add beans, chicken stock and water; bring to a boil.
  • Simmer for about 5 minutes.
  • Stir in spinach and cook for another 2 to 5 minutes until spinach is cooked through.

1 tablespoon olive oil
1/2 red onion, chopped
3/4 teaspoon fresh rosemary, or 1/4 teaspoon dried
2 cups chicken stock, or reduced-sodium canned broth
2 cans (14 1/2 ounces each) white beans, drained and rinsed
1 cup canned chopped tomatoes
Salt and pepper
3 cups lightly packed baby spinach, washed well and dried
2 cups leftover Bourbon-Glazed Ham, (or lamb, below) cut into 1/2-inch pieces
2 cups leftover Garlic-Roasted Leg of Lamb, (or ham, above) cut into 1/2-inch pieces

Steps:

  • In a medium saucepan, heat oil over medium heat just until glistening. Add onion and rosemary, and cook until onion is soft and translucent, about 5 minutes.
  • Add chicken stock, 2 cups of water, beans, and tomatoes; bring to a boil. Season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Reduce heat, and simmer, skimming occasionally, until the soup has thickened slightly, about 20 minutes.
  • Stir spinach into the soup, and cook just until it wilts, about 1 minute. Divide the chopped ham or lamb among four bowls, and ladle the hot soup on top.
