1 Tbsp olive oil
8 oz bacon (chopped)
1 stick celery (finely diced)
1 medium onion (finely diced)
2 medium carrots (thinly sliced)
3 medium (1 lb potatoes, peeled and sliced into 1/3" thick pieces)
1/4 cup quinoa (rinsed, optional)
2-3 cups sauerkraut (triple rinsed & drained (we use 3 cups or about 2 lbs))
8 cups low sodium chicken broth
2 cups water (or to taste)
1 15 oz can white beans (click to learn how to cook your own beans)
1 bay leaf
Salt (Pepper and Mrs. Dash seasoning, to taste)

Steps:

  • Heat 1 Tbsp oil in a large soup pot or Dutch oven. Add chopped bacon and sautee until browned then remove with a slotted spoon and reserve.
  • Add finely chopped celery and onion. Saute until softened and golden (5 min).
  • Add sliced carrots, potatoes, 1/4 cup quinoa (if using), 8 cups broth and 2 cups water. Bring to a boil then reduce heat and simmer 15 min.
  • Add 2-3 cups of well rinsed and drained sauerkraut and half of cooked bacon (I keep some for garnish), white beans with their juice, and 1 bay leaf and continue to cook until potatoes are tender (about 10 min). Season soup to taste (I added 1/2 tsp salt, 1/4 tsp pepper and 1/2 tsp Mrs Dash). Serve with fresh crusty bread.

Number Of Ingredients 12

4 can(s) great northern beans; drained and rinsed (or use dry beans & soak overnight)
1/2 lb bacon, fried crispy and crumbled
1/2 lb ham, diced & fried golden brown
3 medium carrots, diced
3 celery stalks, diced
1 medium onion, minced
1/2 tsp thyme, dried
1 tsp garlic powder
1 can(s) tomato paste (6 oz)
6 c vegetable stock
1 Tbsp red wine vinegar
salt & pepper, to taste

Steps:

  • 1. Place all ingredients except wine vinegar, beans, salt and pepper in a large kettle. Simmer until veggies are tender. Add beans until cooked through. Stir in vinegar. Season with salt & pepper if needed. NOTE: If using dry beans that you have soaked overnight, put them in the kettle with the veggies..simmer until beans are cooked through.
  • 2. Use an immersion blender to puree some of the beans in the pot to thicken to your desired consistency.
  • 3. You probably won't need to add salt to this as there is plenty from the bacon and ham. I used lower sodium bacon and it was perfect.

Time 1h5m

Yield 4 servings

Number Of Ingredients 18

3 tablespoons EVOO, plus more for drizzling
5 ounces pancetta, finely diced
4 cloves garlic, finely chopped or grated
2 to 3 small stalks celery, finely diced
2 medium carrots, finely diced
1 large fresh bay leaf
1 onion, finely diced
Herb bundle of fresh parsley, sage, rosemary and thyme tied with kitchen string
Kosher salt and freshly ground pepper
2 tablespoons tomato paste
1/2 cup dry white wine
6 cups chicken stock
Two 15-ounce cans cannellini beans
1 small bunch Tuscan kale, stems and ribs removed and leaves finely shredded or chopped
Freshly grated nutmeg
1 rind from a wedge of Parmigiano-Reggiano
Shaved Parmigiano-Reggiano, for serving
Crusty bread, for serving

Steps:

  • Heat the EVOO in a Dutch oven or medium soup pot over medium-high heat. Add the pancetta and cook until crisp. Add the garlic, celery, carrots, bay leaf, onions and herb bundle and season with a little salt and more pepper. Cook until soft, 7 to 8 minutes. Add the tomato paste and cook, stirring, for 1 minute. Deglaze with the wine, stirring and scraping up any browned bits from the bottom of the pot with a wooden spoon. Stir for 1 minute more. Add the stock and bring to a low boil.
  • Add a few ladles of the soup to a food processor along with 1 can of beans and puree until smooth. Return the puree to the soup and stir to combine. Add the remaining can of beans and the kale and cook until the kale is wilted. Season with a hint of nutmeg. Add the cheese rind and simmer for 15 minutes at a low bubble to let the flavors combine. Adjust the seasonings.
  • Remove the cheese rind, herb bundle and bay leaf from the soup. Ladle the soup into shallow bowls and top with shaved Parmigiano-Reggiano and a drizzle of EVOO. Serve with bread for mopping.

Tips:

  • Use high-quality ingredients: Fresh vegetables, flavorful ham, and a good-quality sauerkraut will make all the difference in the taste of your soup.
  • Don't overcrowd the pot: If you're using a small pot, cook the soup in batches. Overcrowding the pot will prevent the soup from cooking evenly.
  • Season to taste: Add salt, pepper, and other seasonings to taste. Start with a small amount and add more until the soup is flavorful.
  • Let the soup simmer: Simmering the soup for at least 30 minutes will allow the flavors to meld and develop.
  • Serve with a side of crusty bread or crackers: This will help to soak up the delicious broth.

Conclusion:

Ham, bean, and bacon soup with sauerkraut is a hearty and flavorful soup that is perfect for a cold winter night. It's easy to make and can be tailored to your own taste. So next time you're looking for a comforting and satisfying soup, give this one a try.
