1 ¼ pounds ground smoked ham
1 pound ground pork
1 pound lean ground beef
1 cup milk
2 eggs
1 ½ cups graham cracker crumbs
1 (10.75 ounce) can tomato soup
¼ cup cider vinegar
1 cup packed brown sugar
1 teaspoon mustard powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the ham, pork OR sausage, and the ground beef. Stir in the milk, eggs and graham cracker crumbs and mix well. Form into large balls about 2 inches in diameter and place them in a 9x13 inch baking dish.
  • In a separate medium bowl, combine the soup, vinegar, brown sugar and mustard powder. Mix well and pour over the meatballs.

1 cup 2% milk
1 cup crushed cornflakes

GLAZE:
1 cup packed brown sugar
1/4 cup vinegar
1 tablespoon ground mustard

Steps:

  • Preheat oven to 350°. Pulse ham in batches in a food processor until finely ground. Combine with the next 7 ingredients just until mixed. Shape into 1-in. balls; place in a single layer on greased 15x10x1-in. baking pans., For glaze, cook and stir all ingredients in a small saucepan over medium heat until sugar is dissolved. 1 lb ground ham (if needed you can get a ham steak or chunk at the deli counter to grind)
1 lb ground pork
2/3 cup crushed cracker crumb
1/2-3/4 cup milk
1 green pepper, very finely chopped
2 eggs
1 medium onion, very finely chopped
1 1/2 cups brown sugar
3/4 cup catsup
1 teaspoon dry mustard
1/2 cup molasses
1 teaspoon Worcestershire sauce

Steps:

  • (3 batches of sauce is best when filling a crockpot with a double batch of balls) Ham Balls: Mix all together, gradually adding milk at the end to moisten enough to form balls.

Do not use leftover fluffy rice that has had the starch rinsed off as they will not hold together well.

  • Saute onion in 1 T butter over medium heat until translucent and beginning to brown. Remove from heat and allow to cool.
  • In a bowl lightly beat 2 eggs. Stir in cooked rice, ham, melted butter, Parmesan cheese, sauteed onion, seasoned salt, garlic salt, parsley and pepper.
  • Cover and refrigerate for 30 minutes.
  • Roll into 1-1/2-inch balls.and press a cheese cube into each ball, reshaping around the cheese.(I have used havarti and swiss in place of the cheddar with fantastic results!).
  • Place the flour into a small bowl. Whisk 2 eggs in a second small bowl. Place the dry breadcrumbs in a third small bowl.
  • Dip each ball into flour, then into the egg and then into the breadcrumbs.
  • Heat oil to 375 degrees, then fry rice balls until golden brown (about 4 minutes). You can also shallow fry them in oil, turning to brown.
  • Drain on paper towels and enjoy! They are nice dipped in french onion dip, ranch dip or all on their own.

1/2 cup graham cracker crumbs
2 tablespoons unsweetened pineapple juice
1 teaspoon dry mustard
1/4 teaspoon salt
1/2 pound ground fully cooked ham
1/2 pound ground pork
1/2 cup snipped dried apricots
1 18 ounce jar apricot preserves
1/3 cup unsweetened pineapple juice
1 tablespoon cider vinegar
1/2 teaspoon ground ginger

Steps:

  • 1. For meatballs, in a large bowl combine egg, graham cracker crumbs, the 2 tablespoons pineapple juice, dry mustard, and salt. Add ground ham, ground pork, and snipped apricots; mix well. Shape into 30 meatballs. In a 15x10x1-inch baking pan arrange meatballs in a single layer. Bake, uncovered, in a 350 degree F oven for 20 minutes. Drain well. In a 3-1/2- or 4-quart slow cooker place cooked meatballs. 2. For sauce, in a small bowl combine apricot preserves, the 1/3 cup pineapple juice, vinegar, and ginger. Pour sauce over meatballs. 3. Cover; cook on low-heat setting for 4 to 5 hours or on high-heat setting for 1 1/2 to 2 hours. 4. Serve immediately or keep covered on low-heat setting for up to 2 hours.
