HAM AND SWISS LINGUINE

HAM AND SWISS LINGUINE image

I like to cook for my neighbors and about once a week I'll have a few over for supper. Their commute to the big city makes them very tired by the time they get home. When I see them going to the mailbox I yell an invite for dinner from my porch, they usually smile real big and tell me they'll be over in 5 minutes. In the 5...

Time 1h15m

Number Of Ingredients 11

8 oz linguine, broke in 1/2, cooked al dente
2 c cubed cooked ham
1 can(s) cream of celery soup
8 oz sour cream
1/2 c mayo
1 medium onion, diced
1/2 tsp curry
1/2 tsp paprika
1/2 stick butter
2 c shredded swiss cheese
pepper to taste

Steps:

  • 1. Boil linguine until al dente. Meanwhile in large bowl, combine soup, sour cream, mayo, butter, and spices. Stir. Add ham, onion, and swiss cheese. Stir to blend. Drain linguine and pour in mixture. Stir to blend and all linguine is covered well.
  • 2. Pour all in a greased 9x13 dish. Bake covered in a 350 degree pre-heated oven for 45 minutes.
  • 3. NOTE: THis is an easy recipe to double. I'd switch up to a lasagne pan, though.

Tips:

  • Bring a large pot of salted water to a boil for the linguine. Cook the linguine according to the package directions, drain it, and set it aside.
  • While the linguine is cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the ham and cook until it is browned. Remove the ham from the skillet and set it aside.
  • Add the onion to the skillet and cook until it is softened. Add the garlic and cook for 1 minute more.
  • Stir in the flour and cook for 1 minute, until it is golden brown. Slowly whisk in the milk and cream. Bring the mixture to a simmer and cook until it is thickened, about 5 minutes.
  • Add the salt, pepper, and nutmeg to the sauce. Stir in the ham, linguine, and Swiss cheese. Cook until the cheese is melted and the sauce is heated through.
  • Serve the ham and Swiss linguine immediately, garnished with parsley.

Conclusion:

This ham and Swiss linguine is a quick and easy meal that is perfect for a weeknight dinner. It is also a great way to use up leftover ham. The creamy sauce and melted Swiss cheese make this dish irresistible. Serve it with a side of salad or roasted vegetables for a complete meal.
