1/2 lb ham, torn into small pieces
2 cups cornbread, cut into small cubes
1 cup frozen peas, thawed
1 teaspoon fresh thyme, chopped
2 cups whole milk
3 eggs, lightly beaten
1 egg yolk, beaten with eggs
salt

Steps:

  • Preheat the oven to 350°.
  • Lightly butter a 9-inch casserole dish.
  • In a bowl, toss the ham, cornbread, peas and thyme; transfer to the baking dish.
  • In the same bowl, beat together the milk, eggs and yolk and 1/8 teaspoon salt. Pour into the baking dish.
  • Let stand for 15 minutes.
  • Bake until the custard is just set in the center, 40 to 45 minutes.
  • Let stand for 10 minutes before serving. Serve with a green salad.

1 pound cavatappi (hollow corkscrew shaped pasta) or other short cut pasta
3 tablespoons butter
3 tablespoons all-purpose flour
1 cup chicken stock
1 1/2 cups whole milk
Freshly ground black pepper
A few grates nutmeg
1 cup shredded Gruyere
1 cup shredded white sharp Cheddar
2 tablespoons Dijon mustard
1/4 pound French ham, deli sliced, finely chopped

Steps:

  • Heat a large pot of salted water to a boil, drop in pasta. Cook pasta to just shy of al dente.
  • Heat sauce pot with butter over medium heat, whisk in flour and cook for 1 minute, whisk in stock then milk, allow the sauce to thicken, and season with salt, pepper and nutmeg. Stir in cheeses in a figure eight motion. Stir in Dijon and ham and remove the sauce from heat. Drain pasta and combine with sauce.

1/2 cup breadcrumbs
1 cup cheese (shredded or diced)
1/4 cup butter
1 tablespoon minced onion
2 teaspoons parsley
2 eggs, beaten

  • Put peas and ham in a buttered casserole.
  • In a saucepan, heat milk, add crumbs.

2 1/2 cups toasted bread
2 tablespoons chopped onions
2 tablespoons chopped fresh parsley
1/4 teaspoon poultry seasoning
1/4 teaspoon salt
2 1/4 cups milk
1 (8 ounce) can green peas
2 cups cooked ham, diced
1/4 cup butter
1/4 cup flour
1/4 teaspoon salt
2 teaspoons prepared mustard
1/4 cup parmesan cheese, grated

Steps:

  • Preheat oven to 350 F degrees.
  • Combine bread, onion, parsley, poultry seasoning, salt and 1/2 cup milk.
  • Spoon into a greased 1 1/2 qt shallow baking dish.
  • Drain peas,[b]reserving liquid[/b], and spread over bread mix and add ham.
  • Melt butter in a saucepan, remove from heat and stir in flour, mustard and remaining salt.
  • Mix reserved pea liquid and enough milk to to equal 2 cups.
