8 cloves garlic, smashed
1 shallot, sliced
1 (8 ounce) package sliced fresh mushrooms
4 cups bagged fresh spinach
¾ cup diced cooked ham
9 eggs, beaten
1 cup shredded Cheddar cheese
1 pinch salt and ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat butter in a large ovenproof skillet over medium heat; cook and stir garlic and shallot in hot butter until shallot is softened, about 5 minutes. Stir mushrooms into shallot and garlic; cook and stir until mushrooms begin to brown, 8 to 10 minutes. Stir spinach into mushroom mixture, cover, and cook until spinach is wilted, about 5 more minutes, stirring occasionally.

1 egg
2 tablespoons water
1 tablespoon butter
1 medium shallot, diced
1/2 cup diced mushroom
1/2 cup diced ham slices
1 cup shredded colby-monterey jack cheese, divided
1 teaspoon cilantro
1 teaspoon parsley
1 teaspoon chives
1/2 teaspoon pepper
