I've had this for at least 15 years. The chill time is the cook time. The longer you chill the better it tastes. Toss again before you serve this.

Time 1h10m

Yield 6 serving(s)

Number Of Ingredients 12

1/4 cup sour cream
3/4 cup mayonnaise
1 tablespoon Dijon mustard
2 teaspoons white vinegar
1 teaspoon sugar
1/4 teaspoon salt
1/8 teaspoon pepper
1 (15 ounce) can whole kernel corn (drained)
1 (2 ounce) jar drained and diced pimentos
2 carrots (peeled and grated)
1/3 cup diced onion
1 cup cooked ham (diced)

Steps:

  • In a medium-sized bowl, make dressing by mixing together sour cream, mayonnaise, mustard, vinegar, salt, and pepper.

  • To make the salad ahead of time, cook the ham and corn according to the recipe instructions and then let them cool completely. Store the ham and corn separately in airtight containers in the refrigerator for up to 3 days. When ready to serve, combine the ham, corn, and remaining ingredients in a large bowl and toss to coat.
  • This salad is also great served on a bed of lettuce or arugula. For a more substantial meal, serve it with grilled chicken or fish.
  • If you don't have any celery on hand, you can substitute thinly sliced green bell pepper or cucumber.
  • For a sweeter salad, add a tablespoon or two of honey or maple syrup to the dressing.
