1 yellow onion (OR red onion, chopped)
1 red bell pepper (chopped)
1/2 green bell pepper (chopped)
1 jalapeno (seeded and minced)
5 cloves garlic (minced)
2/3 cup chopped ham*
3 (14.5 oz) cans black beans
1 (14.5 oz) can Rotel diced tomatoes (with chiles)
2 (14.5 oz) cans chicken broth (OR vegetable broth)
3 tsp cumin
2 tsp coriander
1/2 tsp chili powder
1/4 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
1/8 tsp cayenne pepper
1 tsp apple cider vinegar
1 tsp hot sauce
1 lime (juiced)
2 bay leaves
1 tbsp cilantro (chopped)
sour cream
cilantro
jalapeno slices

Steps:

  • In a large stockpot or Dutch oven set over medium-low heat, saute the onion, bell peppers, and jalapeno in the olive oil until tender. Add the garlic and cook for 1-2 more minutes.
