Grilled Ginger Soy Halibut image

This recipe belongs to a fellow member, Sher Bird. She had posted it on another cooking web-site we both belonged to a couple of years ago. This recipe is so flavorful, simple, easy and most ingredients you might already have on hand. Sher said, it is her family's favorite way to eat fish. She also uses the sauce for salmon on...

Time 40m

Number Of Ingredients 10

1 lb halibut steaks (may use cod, sea bass or other firm white fish
2 Tbsp butter
2 Tbsp honey or brown sugar
1 Tbsp fresh lemon juice
1 Tbsp soy sauce
1 tsp dijon style mustard
1/4 tsp minced fresh ginger
2 clove garlic
1/2 tsp fresh chopped chervil or other herb of your choice
salt and pepper to taste

Steps:

  • 1. In small saucepan, combine all ingredients, except the halibut. Over medium heat, mix until sugar is dissolved.
  • 2. Put Halibut in a non metalic pan or ziplock bag, pour marinade over fish. Marinate in fridge for about 30 mins. I make a double batch of marinade and seperate, one batch for marinating and one batch for basting.
  • 3. Oil grill grate and preheat grill. Place halibut steaks on grill and cook on each side for about 5 minutes, basting with marinade while fish is cooking.
  • 4. Grill until done, halibut should be opaque through to the middle and flake easily with a fork. Discard extra marinade that has had contact with the raw fish.
  • 5. Notes: Instead of mincing the garlic and ginger, I like to grate it. Seems the grating brings more flavor. I never add the salt I have never added the herbs I have made this with the honey or the brown sugar, very little taste difference. Actually, I used Splenda brown sugar. I have used the grill, oven broiler and grill pan on top of the stove to cook the fish for this recipe. They all work fine.

1 piece fresh ginger (1/2 inch), peeled and roughly chopped
3 tablespoons freshly squeezed lime juice (2 limes)

Salt and freshly ground black pepper
1 halibut fillet (1 1/2 pounds), skin removed and cut into 4 equal pieces

Steps:

  • Combine garlic, jalapeno pepper, ginger, lime juice, and cilantro in the jar of a blender. Cover blender, and remove the stopper. Turn on blender, and slowly drizzle in the olive oil. Process until mixture is bright green and smooth. Season cilantro sauce to taste with salt and black pepper.

ROASTED GARLIC AND PARMESAN BAKED HALIBUT

Roasted Garlic and Parmesan Baked Halibut image

Fish can be intimidating for those who didn't grow up cooking or eating it. One of the best ways to ease people into eating anything unfamiliar is by smothering it in roasted garlic and cheese. Forget the old Italian maxim of not mixing seafood and cheese: they pair magically and make first forays into cooking and eating halibut easy to execute and even easier to eat.

Number Of Ingredients 8

1 garlic head
1/2 tablespoon olive oil
1 tablespoon unsalted butter
1 pound halibut, skin removed, in 4 even fillets
Kosher salt, as needed
Freshly ground black pepper, as needed
1/2 cup mayonnaise
1/2 cup grated Parmesan

Steps:

  • Preheat the oven to 375˚F.
  • Cut off the top of the head of garlic and brush off some of the outer paper skin, leaving just the individually wrapped cloves. On a piece of foil, pour the olive oil over the garlic, then wrap the foil around it and place it in the oven for 45 minutes, until it's completely soft. For the recipe, you'll only need six cloves from the head, but it's worth making a whole head to keep the rest for spreading on crusty bread or adding to salads.
  • Raise the oven temperature to 425˚F.
  • Heat the butter in an oven-proof pan over low heat. Sprinkle both sides of the fish with salt and pepper. When the butter is melted, add the halibut and put it into the oven for 10 minutes. The fish should be just cooked and opaque throughout.
  • While the halibut cooks, blend or food process together six cloves of garlic, the mayonnaise, and parmesan. When the halibut is done, pull it out and generously smear the mayonnaise mixture on the top. Switch the oven to a high broil and return the pan to the still-hot oven for 4 minutes under the broiler, until the top is almost entirely golden brown.
  • Remove and serve immediately.

Tips:

  • Choose the freshest halibut you can find. Look for fillets that are firm and have a slightly translucent appearance. Avoid fillets that are dull or have a slimy texture.
  • Pat the halibut dry before cooking. This will help to prevent the fish from sticking to the pan and will also help to create a crispy crust.
  • Season the halibut generously with salt and pepper. This will help to enhance the natural flavor of the fish.
  • Use a combination of olive oil and butter to cook the halibut. This will help to prevent the fish from drying out and will also add flavor.
  • Cook the halibut over medium heat. This will help to ensure that the fish is cooked through without overcooking.
  • Serve the halibut immediately with your favorite sides. Some popular sides for halibut include roasted vegetables, mashed potatoes, and rice.

Halibut is a delicious and versatile fish that can be prepared in a variety of ways. The recipes in this article provide a great starting point for cooking halibut, but you can also experiment with your own variations. With a little practice, you'll be able to cook halibut like a pro!
