STEAMED HALIBUT WITH CHILI LIME DRESSING

Steamed Halibut With Chili Lime Dressing image

You can substitute other white fleshed fish for the halibut and if you don't have a steamer, you can wrap the fish in a loose foil packet and cook it in the oven for the same 9 to 11 minutes -- just be careful when you open the foil because the steam will rush out. And, depending on your palate, you can increase or decrease the garlic and the heat.

Chili-Lime Broiled Halibut With Cilantro Capellini image

This is SO easy, even though it sounds fancy. Delicious, too! I used indian chili powder rather than the american kind....still not overpoweringly spicy. There was just enough "bite" to complement the lime juice.

ROASTED HALIBUT WITH LEMONS, OLIVES AND ROSEMARY

Roasted Halibut With Lemons, Olives and Rosemary image

Fish can be finicky dinner-party fare, especially for the distracted cook. Step away for a moment to sip your cocktail and your fillets might go from pearly to parched. This dish, though, inspired by one from Southern Italy, elegantly feeds a crowd. The fish, halibut, is seasoned with chile, salt and olive oil, then topped with rosemary, lemon and olives and roasted. It's a lighter main dish that won't leave anyone hungry.

Time 10m

Yield 2 servings

Number Of Ingredients 7

2 (8-ounce) halibut fillets, preferably at least 1-inch thick
1 1/2 teaspoons extra virgin olive oil, more to taste
Kosher salt
Ground chile pepper, preferably Turkish or Aleppo
2 rosemary branches
1 small lemon, very thinly sliced
1/4 cup sliced, pitted calamata or other good-quality black olives

Steps:

  • Heat oven to 450 degrees. Place fish in a baking dish, brush fillets with 1 teaspoon of oil and season with salt and chile pepper. Top each fillet with a rosemary branch and several slices of lemon. Drizzle remaining oil over lemon slices and sprinkle with additional salt. Scatter olives over fish and pan.
  • Bake until just opaque, about 10 minutes. If lemon slices have not browned or singed (this will depend on how thinly you slice them), place pan under broiler for 1 to 2 minutes. Serve drizzled with more olive oil; sprinkle with more salt and chili, if desired.

Tips:

  • Choose the Right Halibut Steaks: Select halibut steaks that are 1-1 1/2 inches thick and have a firm, springy texture. Avoid steaks that are thin or have a mushy texture.
  • Marinate the Halibut: Marinating the halibut in a mixture of chili, lime, olive oil, and spices helps to infuse the fish with flavor and keep it moist during cooking.
  • Use a Grill or Pan-Searing Method: Halibut can be cooked using a grill or pan-searing method. If grilling, preheat the grill to medium-high heat and cook the halibut for 6-8 minutes per side, or until cooked through.
  • Serve with a Simple Garnish: A simple garnish of sliced avocado, fresh cilantro, and lime wedges adds a pop of color and freshness to the dish.

Conclusion:

These halibut recipes offer a variety of cooking methods and flavor combinations to suit different tastes and preferences. Whether you choose to grill, pan-sear, or bake the halibut, you can create a delicious and satisfying meal that showcases the delicate flavor of this versatile fish. Experiment with different marinades, spices, and accompaniments to find your favorite way to enjoy halibut.
