Time 5h25m

Yield 4 servings

Number Of Ingredients 9

4 teaspoons chopped fresh rosemary leaves
1 lemon, zested
3 cloves garlic, minced
1/4 cup extra-virgin olive oil, plus extra for pans
1/2 teaspoon cayenne pepper
1 tablespoon Dijon mustard
Kosher salt and freshly ground black pepper
1 (3 to 4-pound) chicken, skin-on, backbone removed and halved
Special equipment: 2 large cast iron skillets

Steps:

  • Preheat the oven to 375 degrees F.
  • Garlic-Herb Paste: Combine the rosemary, lemon zest, garlic, olive oil, cayenne, Dijon mustard, and salt and pepper to taste, in a small bowl. Stir to incorporate.
  • Rub chicken with Garlic-Herb Paste. Let marinate at room temperature for 1 hour.
  • Coat a large cast iron skillet lightly with olive oil and heat over medium-high heat. Oil the bottom of a second cast iron skillet, of equal or smaller size.
  • Put the chicken, skin side down, in first pan, and top it with the second pan, oiled-side down on top of the chicken. If you don't have a second cast iron skillet, use a regular pan and weigh it down with 2 heavy cans. Sear chicken until lightly browned, about 5 minutes. Remove top skillet, flip the chicken and transfer to the oven. Cook until chicken is cooked through, about 35 minutes. Transfer to a serving platter and serve.

Time 35m

Yield 2-4 serving(s)

Number Of Ingredients 6

4 boneless skinless chicken breasts
1 large onion
3 cups louisiana hot sauce
2 tablespoons margarine or 2 tablespoons cooking oil
4 tablespoons red pepper flakes
salt and pepper

Steps:

  • Note: Regular chicken can be substituted for more flavor impact!
  • Preheat large saucepan on top of stove.
  • Chop onions into one inch bite size pieces.
  • Add 2 tablespoons margarine or cooking oil.
  • Add the pepper flakes to release the heat into the margarine or oil.
  • After about two minutes, making sure the pepper flakes do not burn, add onions and saute until the onions are either translucent or lightly browned.
  • Add chicken breasts and cook with lid on saucepan for 20 minutes.
  • Note: Remember to keep on medium heat and check periodically to make sure the hot sauce doesn't evaporate or burn.
  • If you need to add more hot sauce that is fine. Or if you would rather substitute water instead of more hot sauce that is fine also.

Tips:

  • Mise en Place: Before you start cooking, make sure you have all of your ingredients and equipment ready to go. This will help you stay organized and avoid any scrambling.
  • Use a Large Skillet or Wok: This will give you plenty of room to cook the chicken and vegetables without overcrowding the pan. Make sure it is a heavy-bottomed skillet or wok to distribute heat evenly while keeping the vegetables crispy and the chicken succulent.
  • Don't Overcrowd the Pan: Cooking the chicken and vegetables in batches is essential if you want to avoid steaming them instead of stir-frying. Overcrowding will result in soggy food.
  • Use High Heat: Stir-frying is all about high heat. This will help you get that nice sear on the chicken and vegetables and prevent them from becoming limp.
  • Stir Constantly: This will help you ensure the chicken and vegetables cook evenly and prevent them from burning.
  • Add the Sauce Last: Adding the sauce at the end of the cooking process will help prevent it from burning and will also help to keep the chicken and vegetables crispy.
  • Serve Immediately: Stir-fried dishes are best served immediately after they are cooked. This will help to ensure that they are hot, crispy, and delicious.

Conclusion:

The Half-N-Hour Hellfire Chicken recipe is a delicious and easy-to-make dish that is perfect for a busy weeknight meal. Packed with flavor and heat, the chicken, vegetables, and sauce come together in a delightful symphony of tastes and textures. And with minimal prep time and cooking time, this dish is sure to become a new family favorite. Try it out and let your taste buds dance with joy!
