2 cups heavy cream (I used amul low fat)
1 cup sweetened condensed milk
3 tablespoons rose syrup
2 tablespoons gulkand (optional)
1/2 teaspoon vanilla extract

Steps:

  • Tip in 2 cups heavy cream in a large mixing bowl. Using an electric beater or stand mixer beat until soft peaks are formed. Do not over beat.
  • Add rose syrup and condensed milk. Add rose water now if using.
  • Mix very gently without deflating the cream. Fold in the gulkand and mix very gently if you are using gulkand.
  • Transfer the ice cream to a freezer safe container.
  • Place a piece of parchment first and then close with a tight lid. Freeze for 12 hours or overnight. Scoop and serve rose ice cream as required.

8 oz Whipped cream or cool whip
5 oz Condensed milk
6 oz Evaporated milk
5 tbsp Gulkand / rose Petal Jam
2 drops Light pink color
1/2 tsp Rose essence/extract
Rose petals for garnishing

Steps:

  • Take Heavy Whipping cream, Condensed milk, Whipped cream, Evaporated milk, Gulkand, Rose essence, and Pink color. Mix them using spoon or whipping machine for 3 minutes or until all the ingredients mixed well.
  • Take it out into the air tight box. Cover it and Put it into the freezer for 5 to 6 hour or until ice cream get fully set.

3 cups diced fresh rhubarb or sliced frozen rhubarb
2/3 cup sugar plus 3/4 cup sugar, divided
2/3 cup water
1 tablespoon butter
1/3 cup quick-cooking oats
1 tablespoon brown sugar
1/4 teaspoon ground cinnamon
1-1/2 cups heavy whipping cream
1-1/2 cups half-and-half cream
1 teaspoon vanilla extract

Steps:

  • Place rhubarb, 2/3 cup sugar and water in a small saucepan; bring to a boil, stirring occasionally. Reduce heat; simmer, until rhubarb is softened and mixture is thickened, 8-10 minutes. Cool completely., In a small skillet, melt butter over medium-high heat. Add oats, brown sugar and cinnamon; cook and stir until oats are coated, 45-60 seconds. Remove to a bowl; cool completely., In a bowl, whisk together both creams, vanilla and remaining sugar until sugar is completely dissolved. Fill cylinder of an ice cream maker no more than two-thirds full. Freeze according to manufacturer's directions. During the last 5 minutes of processing, add oat mixture, breaking up any large crumbles before adding., Transfer half of the ice cream to a 1-quart freezer container; drizzle with half of the rhubarb mixture. Using a knife, cut through mixtures in a zigzag pattern to swirl. Repeat with remaining ice cream and rhubarb. Freeze, covered, until firm, about 4 hours.
