I developed this recipe after visiting my ancestral homeland of Ireland. It's a great way to get Guinness into your bread! Serve warm with butter and honey.

Steps:
- Preheat oven to 425 degrees F (220 degrees C). Grease an 8x8 inch baking pan.
- Mix together the oats, flour, sugar, baking soda, baking powder, and salt in a bowl. In a separate large bowl, stir together the butter, vanilla, buttermilk, and Guinness® beer. Pour the flour mixture into the beer mixture, and gently stir until well blended. Pour batter into the prepared baking pan, and sprinkle with additional oats if desired.
- Bake in preheated oven for 30 minutes, then turn the temperature down to 400 degrees F (200 degrees C), and bake for an additional 30 minutes. Turn the oven off, open the door, and allow to cool for 30 minutes in the oven before turning out onto a wire rack.

- Adjust oven rack to lower-middle position and heat oven to 375 degrees. Mix flour, sugar, baking powder and salt in a large bowl. Mix well. Place a fat 3 1/2 cups of this mix into a baggie or jar to save for another day. To the remaining fat 3 1/2 cups flour mixture, toss in the caraway seeds, pecan pieces and mix. Add the Guinness. Stir with a fork or sturdy spatula until combined. Turn the lumpy dough into a buttered loaf pan. Pour melted butter over top of loaf. Bake until golden brown, about 45-60 minutes. Transfer to a wire rack to cool.

- Mix together oats, whole-wheat flour, brown sugar, baking powder and salt.
- In separate bowl, combine butter, eggs, molasses and Guinness.

- 1. Preheat oven to 375 degrees. Prepare a large loaf pan (or 2 smaller ones) by spraying lightly with oil (like Pam Spray or Baker's Joy)
- 2. REMEMBER TO DOUBLE SIFT THE FLOUR - either the self-rising or AP flour. NOTE: measure after sifting
- 3. Mix the dry ingredients, 1/4 cup melted butter, and beer together. Pour into a prepared loaf pan
- 4. Pour the remaining 1/4 cup of melted butter over mixture; and then bake 1 hour.
- 5. Remove to a wire rack and let cool for a few minutes. Turn the loaf out and slice at least 1" pieces. Serve warm, with or without spreading on softened butter or honey. Enjoy!
Tips:
- Use fresh Guinness for the best flavor. If you don't have Guinness, you can substitute another dark beer, but the flavor will be different.
- Don't overmix the batter. Overmixing will make the bread tough.
- Bake the bread until a toothpick inserted into the center comes out clean. If the toothpick comes out with wet batter, the bread needs to bake longer.
- Let the bread cool completely before slicing and serving. This will help the bread hold its shape.
- Store the bread in an airtight container at room temperature for up to 3 days. You can also freeze the bread for up to 2 months.
