1/4 cup 1% fat cottage cheese
1/4 cup low-fat mayonnaise
2 anchovies, chopped (I substituted 1 tsp. anchovy sauce)
2 tablespoons lemon juice
1/4 teaspoon Worcestershire sauce
1 teaspoon minced garlic
2 tablespoons olive oil
3 tablespoons grated parmesan cheese
salt & freshly ground black pepper

Steps:

  • Combine cottage cheese, mayonnaise, anchovies, lemon juice, Worcestershire, garlic and olive oil in a food processor and puree until smooth.
  • Stir in Parmesan and season with salt and pepper to taste.
  • If dressing is too thick, thin down with a little warm water.

2 ounces cubed Parmesan
2 cloves garlic
2 tablespoons Dijon mustard
11/2 teaspoons white wine vinegar
11/2 teaspoon Worcestershire sauce
Pinch kosher salt
Pinch freshly ground black pepper
1 cup silken soft tofu
2 tablespoons extra-virgin olive oil

Steps:

  • Starting on the lowest speed, chop the cheese cubes in the blender jar until it settles into the bottom of the jar, gradually increasing the speed. Add the garlic down the chute and chop until minced.
  • Next, add the mustard, white wine vinegar, Worcestershire sauce, salt and pepper, and tofu to the blender and blend until smooth. While the blender is running, drizzle olive oil down the middle of the vortex that has formed. Add more or less of the olive oil and blend until it reaches salad dressing consistency.

6 cloves garlic, peeled, divided
¾ cup mayonnaise
5 anchovies anchovy fillets, minced
6 tablespoons grated Parmesan cheese, divided
1 teaspoon Worcestershire sauce
1 teaspoon Dijon mustard
1 tablespoon lemon juice, or more to taste
salt to taste
ground black pepper to taste
¼ cup olive oil
4 cups day-old bread, cubed
1 head romaine lettuce, torn into bite-size pieces

Steps:

  • Mince 3 cloves of garlic, and combine in a small bowl with mayonnaise, anchovies, 2 tablespoons of the Parmesan cheese, Worcestershire sauce, mustard, and lemon juice. Season to taste with salt and black pepper. Refrigerate until ready to use.
  • Heat oil in a large skillet over medium heat. Cut the remaining 3 cloves of garlic into quarters, and add to hot oil. Cook and stir until brown, and then remove garlic from pan. Add bread cubes to the hot oil. Cook, turning frequently, until lightly browned. Remove bread cubes from oil, and season with salt and pepper.
  • Place lettuce in a large bowl. Toss with dressing, remaining Parmesan cheese, and seasoned bread cubes.
