1 teaspoon crushed garlic

1 1/2 pounds boneless, skinless chicken breast

1/3 cup all-purpose flour, for dredging

Steps:

  • Turn on broiler. Line a baking sheet with aluminum foil and set aside.
  • In a small saucepan, over medium-low heat, combine guava jelly, juice from lime, rosemary sprigs, and crushed garlic. Heat through.
  • In large frying pan, over medium-high heat, heat oil. Season chicken breasts with salt and pepper. Dredge seasoned chicken in flour and place in hot pan. Cook chicken 3 to 4 minutes per side or until cooked through.

1 lb chicken tenderloins
1/2 cup flour
salt
pepper (black, ancho or chipotle)
1 egg white
1/2 cup guava jelly
3 tablespoons vinegar
2 tablespoons soy sauce
1/4 cup brown sugar
1/2 cup water
2 tablespoons cornstarch
2 tablespoons water
1 tablespoon finely chopped ginger
4 -6 tablespoons vegetable oil, divided
