Time 1h5m

Yield 6-8 serving(s)

Number Of Ingredients 7

2 tablespoons achiote seeds
1/2 teaspoon salt
2 tablespoons cooking oil or 1 tablespoon butter
1/2 cup chopped onion
2 cups water
2 cups rice
1/2 cup diced bacon (optional)

Steps:

  • Place the achiote seeds in 2 cups of water to soak, and lightly grind along the edge until the water is a deep red. The darker the water the darker shade of red the rice will be. **The water will stain most material so I recommend a clear glass and a stainless steel spoon.**.
  • After you have the desired color, filter the water through a cloth or fine sieve that will separate the colored water from any seeds and foreign material. Set the colored water aside.
  • Wash rice and drain. Place in a rice cooker with the achiote water from above (add extra water depending on the directions for your rice cooker), salt, onions, oil, and bacon, if using. Close the rice pot and push the start button.

AUTHENTIC NEW ORLEANS RED BEANS AND RICE

Authentic New Orleans Red Beans and Rice image

Just like mom makes. I recommend cooking the day before you want to eat it. It is a time-consuming recipe and the taste gets even better after 24 hours in the refrigerator. For extra spice, add a splash of hot sauce.

Tips for Making Guam's Red Rice

  • Use high-quality rice. The type of rice you use will greatly affect the flavor and texture of your red rice. Choose a short-grain rice, such as Japanese or Korean rice, for a sticky, chewy texture. If you prefer a more fluffy rice, use a long-grain rice, such as basmati or jasmine rice.
  • Rinse the rice thoroughly. This will remove any impurities and starch from the rice, resulting in a more flavorful and fluffy dish.
  • Toast the rice before cooking. Toasting the rice in a little oil before cooking will give it a nutty flavor and help it to absorb the cooking liquid better.
  • Use a flavorful cooking liquid. The cooking liquid you use will add flavor to the rice. Try using chicken broth, vegetable broth, or coconut milk instead of water.
  • Add aromatics to the rice. Aromatics, such as garlic, onion, and ginger, will add depth of flavor to the rice.
  • Let the rice rest before serving. After the rice is cooked, let it rest for a few minutes before serving. This will allow the rice to absorb any remaining cooking liquid and become more flavorful.

Conclusion

Guam's red rice is a delicious and easy-to-make dish that is perfect for any occasion. With its vibrant red color and nutty flavor, it is sure to be a hit with your family and friends. So next time you're looking for a new side dish to try, give Guam's red rice a try. You won't be disappointed!
