GUACAMOLE ROTEL
I was in the process of making a "quick" guacamole to go with fajitas. The salsa I had planned to use had gone bad. Rotel to the rescue. I drained a can of Rotel tomatoes and dinner was saved.

Steps:
- Cut the avocados in half, remove the pits and scoop the flesh out of their shells into a large bowl. Immediately add the lemon juice, hot pepper sauce, onion, garlic, salt and pepper and toss well. Using a sharp knife, slice through the avocados in the bowl until they are finely diced. Add the tomato. Mix well and taste for salt and pepper. Serve with chips.
Tips:
- For the best flavor, use ripe avocados. They should be slightly soft to the touch but not mushy.
- If you don't have fresh cilantro, you can use dried cilantro. However, the flavor will be less intense.
- If you like a spicy guacamole, add more diced jalapeño peppers. You can also add a pinch of cayenne pepper for an extra kick.
- Be careful not to overmix the guacamole. Otherwise, it will become too mushy.
- Serve the guacamole immediately or store it in the refrigerator for up to 2 days.
Conclusion:
Guacamole rotel is a delicious and versatile dip that can be enjoyed with a variety of foods. It is perfect for parties, potlucks, or simply as a snack. With its creamy texture, zesty flavor, and vibrant color, guacamole rotel is sure to be a hit with everyone who tries it.
