Categories     main-dish

Time 1h40m

Yield 3 to 4 servings

Number Of Ingredients 11

8 ounces applewood-smoked bacon strips
1 small yellow onion, diced
3 pounds dried white beans
1/4 cup high-quality chicken stock or broth
3 tablespoon salt
3 tablespoon black pepper
1 cup diced tomatoes
2 cups arugula
Three to four fresh 6-ounce grouper fillets or like fish
1 to 2 tablespoons olive oil
Sea salt and pepper

Steps:

  • For the beans with arugula and tomatoes: Slice the bacon strips into 4 even pieces and cook in a large stock pot over medium-high heat until brown and starting to get crispy. Add the onion and stir, making sure to scrape the bottom of pot. Cook until the onion is soft, about 5 minutes. Add the beans, chicken stock, 8 cups of water, salt and pepper. Bring to a boil, then lower the heat to medium-low and simmer. Stir the beans frequently and check the water level: If they start looking dry add a little more water. When the beans no longer float, after about an hour, reduce the heat to low. Continue cooking until the beans are soft, 25 to 30 minutes more.
  • For the grilled fish: Heat a grill or heavy grill pan over medium-high heat. If using a grill, coat the fish with the oil, season with salt and pepper and add to the grill using tongs to adjust the fish and prevent sticking. If using a grill pan, season the fish with salt and pepper and add the oil to the grill pan (if the oil begins to smoke, reduce the heat slightly). Cook the fish until white on all sides and edges and firm to the touch, 3 to 4 minutes per side.
  • Just before serving, add the tomatoes and arugula to the beans and stir in to heat the tomatoes and wilt the arugula, just a few minutes. Serve with the fish.

Categories     Food & Cooking     Dinner Recipes     Dinner Side Dishes

Yield Makes 4 cups

Number Of Ingredients 17

4 cups dried black beans
1 carrot, peeled, plus 1/2 cup finely chopped
2 ribs celery, plus 1/2 cup finely chopped
1 onion
5 sticks cinnamon, crushed
1 teaspoon whole cloves
1 teaspoon whole crushed allspice
1/2 cup plus 2 teaspoons coarse salt
1 bunch fresh thyme
8 sprigs fresh rosemary
Grapeseed oil
2 tablespoons plus 1 1/2 teaspoons very finely chopped ginger
1/2 cup finely chopped shallots
1 cup sake
1 tablespoon plus 1 1/2 teaspoons soy sauce
1 1/2 cups rice-wine vinegar
1/4 cup black truffle juice

Steps:

  • Place beans in a large bowl with enough water to cover; let soak overnight. Drain beans and rinse; transfer to a large pot. Add enough water so that the ratio if water to beans is 2 to 1. Add carrot, celery, and onion to pot. Place cinnamon, cloves, and allspice in a piece of cheesecloth and tie with a piece of kitchen twine to enclose; add to pot. Cook beans over medium-high heat until tender, but not mushy.
  • Add 1/2 cup salt, thyme, and rosemary to pot and let stand until completely cool; drain. Transfer beans to a large bowl, discarding vegetables and spice packet; set aside.
  • Coat the bottom of a medium skillet with grapeseed oil. Heat skillet over medium-high heat. Add ginger and cook until lightly golden. Add chopped carrots, celery, and shallot; season with 2 teaspoons salt. Cook until vegetables are tender. Remove from heat and let cool. Add to beans.
  • Heat sake in a small skillet over medium heat until reduce by half; transfer to a medium bowl. Whisk in soy sauce, rice-wine vinegar, and truffle juice; season with salt. Pour over bean mixture; stir to combine.

Tips:

  • Choose the freshest grouper fillet you can find. Fresh grouper has a mild, sweet flavor and firm texture.
  • Season the grouper fillet generously with salt and pepper. This will help to enhance the natural flavor of the fish.
  • Sear the grouper fillet in hot oil until it is golden brown on both sides. This will help to create a crispy crust and prevent the fish from drying out.
  • Add the black bean sauce and simmer until the grouper is cooked through. The black bean sauce should be thick and flavorful, and it should coat the fish evenly.
  • Serve the grouper with rice, vegetables, or your favorite side dish.

Conclusion:

Grouper with black beans is a delicious and easy-to-make dish that is perfect for any occasion. The grouper is flaky and tender, and the black bean sauce is flavorful and slightly spicy. This dish is sure to be a hit with your family and friends!
