Time 23m

Number Of Ingredients 12

1 1/2 lb grouper fillet (or a similar fish)
kosher salt
1 tbsp dry oregano
1 to 1 1/2 tsp ground cumin
1 tsp sweet paprika
1/2 tsp black pepper
4 large garlic cloves, minced
Juice of 1 large lemon, more for later
Extra virgin olive oil (I used Early Harvest Greek extra virgin olive oil)
6 to 8 oz cherry tomatoes, halved
6 to 8 pitted kalamata olives, sliced
Chopped fresh dill (about 1/4 oz or so)

Steps:

  • Heat oven to 400 degrees F.
  • Pat the fish dry and season with salt on both sides. In a small bowl, combine the spices (cumin, oregano, paprika, and black pepper), and season the fish with the spice mixture on both sides.
  • Place seasoned fish in a lightly-oiled baking dish. Add minced garlic on top, then add lemon juice and a generous drizzle of extra virgin olive oil (I used Early Harvest Greek EVOO). Arrange cherry tomatoes and olives on top of the fish fillets.
  • Bake in heated oven for 12 to 13 minutes, or until the fish is opaque and easily flakes with a fork.
  • Remove from heat and add fresh dill (or your favorite herb). Enjoy!

Categories     main-dish

Time 47m

Yield 4 servings

Number Of Ingredients 11

1/2 red onion, julienned
1 zucchini, julienned
1 large carrot, julienned
1 clove garlic, minced
1 tablespoon extra-virgin olive oil
Kosher salt and freshly ground black pepper
4 (4-ounce) sole fillets, hake, flounder or other white fish
1 lemon, thinly sliced, seeds removed
8 sprigs fresh thyme
4 pats butter
1/4 cup white wine

Steps:

  • Preheat oven to 375 degrees F.
  • In a bowl, mix together the onion, zucchini, carrot and garlic. Adds the oil, season with salt and pepper, to taste, and toss to combine. Put each fish fillet in a large square of parchment paper and season with salt and pepper, to taste. Arrange the vegetables on top, dividing evenly. Top the vegetables with 2 lemon slices, 2 sprigs thyme, a pat of butter and 1 tablespoon white wine, layering in order. Fold the parchment paper around the edges tightly in 1/4-inch folds to create a half moon shape. Make sure you press as you crimp and fold to seal the packets well, otherwise the steam will escape. Arrange the packets on a baking sheet. Bake until the fish is cooked through, about 12 minutes, depending on the thickness of the fish. To serve, cut open the packets and serve directly in the parchment on a plate or remove the fish to the plate using a spatula, being sure you don't leave the juices behind.

PAUL'S GRILLED GROUPER

Paul's Grilled Grouper image

This is a South Louisiana secret ... and a great way to grill fish that leaves you worry-free. Not only does this make for easier fish cleaning, but the scales keep the fish from drying out while on the grill. Fish cooked this way consistently results in juicy, moist fillets.

• BASIL BUTTER:
4 • 4 grouper fillets, about 6 ounces each
One • One-half cup Basil Butter (recipe follows)
8 • 8 tomato slices
4 • 4 lemon slices
4 • 4 bay leaves
• Salt and pepper
One-four • One-fourth cup fresh basil leaves, finely chopped
1/2 • 1/2 cup butter, softened
2 • 2 garlic cloves, peeled and minced
3 to 4 • 3 to 4 drops hot sauce

Steps:

  • Combine all of the butter ingredients together and stir until well blended. Take four is-inch squares of parchment paper and fold each one in half. Place a grouper fillet on the left side of each piece of paper (right side if you're left-handed). Place a spoon of basil butter on each fillet and top with 2 slices of tomato. Add lemon slice bay leaf, salt and pepper. Fold right side of parchment paper over the grouper and starting at the top, make one-inch folds all along the edge of the packet until it's completely sealed. Preheat the oven to 325 degrees. Put the four packets on a baking sheet. Bake for 25 to 30 minutes. Remove from oven. Place each packet on a dinner plate and slice open the top with knife or scissors.

Tips:

  • Choose the freshest grouper possible: Look for fish that is firm to the touch and has clear, bright eyes.
  • Use high-quality ingredients: The better the quality of your ingredients, the better your dish will taste. This is especially true for the butter and herbs.
  • Don't overcook the fish: Grouper is a delicate fish that can easily be overcooked. Cook it just until it is opaque throughout, about 10 minutes per inch of thickness.
  • Serve the fish immediately: Grouper en papillote is best served immediately after it is cooked. The fish will continue to cook in the residual heat of the foil packet, so it is important to serve it right away.

Conclusion:

Grouper en papillote is a light and flavorful dish that is perfect for a special occasion. The fish is cooked in a parchment paper packet with herbs and butter, which keeps it moist and tender. The dish is also very easy to make, and it can be tailored to your own taste preferences.
