Kabob koobideh is made with ground lamb or beef or a combination of the two. This is one of the most delicious kabob recipes I have ever found. The kabobs are usually grilled over hot coals or any BBQ.

2 onions, peeled
cheesecloth
1 pound ground lamb
1 pound ground beef
1 green onion, diced
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon sumac powder
½ teaspoon ground turmeric
2 eggs
8 (10 inch) metal skewers

Steps:

  • Shave onions with a grater into a fine mesh strainer. Gently press pulp into the strainer to remove juices. Place pulp into the center of the cheesecloth and gently press until no further juice drips out.
  • Place lamb and beef in a pot. Add green onion and onion pulp; mix until thoroughly combined. Mix in baking powder, salt, pepper, sumac, and turmeric. Add eggs and mix thoroughly. Cover the pot and place in the refrigerator until flavors have melded, at least 30 minutes.
  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Mold meat mixture onto the skewers.
  • Cook on the preheated grill, rotating every minute, until nicely browned on all sides, and meat is no longer pink in the center, about 25 minutes.

Transfer cooked lamb to a bowl, and drain off all but 1 tablespoon fat. Saute onion until soft and translucent, about 5 minutes. Stir in garlic, and saute 1 minute. Stir in garam masala and salt, and cook 1 minute. Return the browned lamb to the pan, and stir in tomato paste and beef broth. Reduce heat, and simmer for 10 to 15 minutes or until meat is fully cooked through, and liquid has evaporated.

1 pastry for double-crust pie
3 tablespoons butter
1 medium onion, minced
2 stalks celery, chopped
2 -3 tablespoons minced fresh garlic
3 lbs ground beef (or use half each) or 3 lbs pork (or use half each)
1 large potato, peeled and cut in 1/2 inch cubes
1 cup water or 1 cup low sodium beef broth
1/2 cup half-and-half cream or 1/2 cup milk
1/2 teaspoon ground cloves
1/2 teaspoon thyme
1/2 teaspoon savory
seasoning salt (to taste) or white salt (to taste)
fresh ground black pepper (to taste)

Steps:

  • In a medium saucepan heat butter over medium-high heat; add in onion, celery and garlic and saute about 3-4 minutes.
  • Stir in ground beef or pork, cubed potatoes, water and half and half cream or milk;. cook while stirring until liquid has completely evaporated.
  • Add in spices; cook stirring for about 5-6 minutes, then allow the mixture to cool.
  • Fit bottom pie pastry into each 9-inch deep-dish pie plates.
  • Divide the beef misture between each pie plate.
  • Top each pie with top pie crusts then flute edges together.
  • Cut slits in top of crust each, then place onto a baking sheet.
  • Bake in 450 degrees F (bottom rack) oven for 15 minutes.
  • Reduce heat to 350 degrees F and continue baking for another 30 minutes.
  • Cool slightly before slicing.

3 3/8 ounces salt
1 5/8 ounces garlic powder
1/2 ounce sweet basil, crushed
1/2 ounce ground thyme
1/3 ounce oregano, crushed
1/4 ounce black pepper
8 whole bay leaves
80 lbs water, boiling
12 lbs spaghetti
2 1/2 ounces salt

Steps:

  • Cook beef in steam-jacketed kettle or stock pot until beef loses its pink color (CCP: 155F or higher), stirring to break apart.
  • Drain or skim off excess fat.
  • Add tomatoes, tomato paste, water, onions, sugar, salt, garlic powder, basil, thyme, oregano, pepper and bay leaves to beef.
  • Mix well.
  • Bring to a boil; reduce heat; cover; cook at low heat about 1 hour, stirring frequently.

Kosher salt and freshly ground black pepper
1/4 cup olive oil
1 1/2 pounds ground meat (I'm using sweet and hot Italian sausage)
1 onion, diced
1 1/2 cups arborio rice
1/2 cup dry white wine
1 cup peas or any leafy vegetable
1 cup grated Parmesan
1/2 cup fresh soft herbs, optional (I'm using finely chopped parsley)
2 tablespoons butter

Steps:

  • Add the chicken stock to a pot, season well with salt and pepper and heat until hot. Keep warm.
  • Meanwhile, heat a large round saucepan over medium heat and add the oil. When hot, add the sausage and cook, without stirring, until brown on both sides, 2 to 3 minutes per side. Break up the meat with a wooden spoon.
  • Add the onions and sweat for 1 minute. Add the rice, toss to combine, and lightly toast in the fat. Add the wine and cook, stirring, until the wine is absorbed.
  • Add 1 cup of the stock and cook, stirring, until the stock is absorbed. Continue to add the stock 1 cup at a time and cook, stirring after each addition until absorbed, until the rice is al dente, about 20 minutes. Add the peas. Remove from the heat and stir in the Parmesan, parsley and butter.

1/2 c soft bread crumbs....(1 slice)
1 Tbsp catsup
1/2 tsp worcestershire sauce

1 pkg pie-crust mix........or your favorite home recipe

Steps:

  • 1. Mix ground beef lightly with the grated onion. Shape in to a large a patty in a frying pan. Browwn6 minutes on each side, then break into small chunks.
  • 2. Beat the egg slightly, stir in bread crumbs, catsup, Worcestershire sauce, salt and pepper. Drizzle over the meat. Cook stirring constantly, for about one minute. Set aside.
  • 3. Make your 2 crust pie recipe...your own recipe. OR: I like the "CLASSIC CRISCO PIE CRUST" recipe on Just A Pinch! Never fails! Roll out 1/2 of crust recipe to a 12 inch square. Then cut into 4..six inch squares. Spoon about a 1/4 cup(or less) onto the center of each square. Fold over to make a pie. Press edges firmly with a fork to seal. Trim if needed. Repeat with remaining pastry and meat mixture. Repeat with the other half of dough.
  • 4. Place pies on an ungreased cookie sheet .. or in pie pans. Bake in a hot oven at 400F for about 20 minutes. Till golden.
  • 5. Serve warm or even cold if on a camping trip. Cold or warm.. they fit right in your pocket. Or do like we did on the farm, with home made pasties wrap warm patty's in foil and put on your head, under your hat.. the will stay warm for a lunch in the field!!

1 tablespoon margarine
1 medium onion
1/4 cup flour

  • Peel onion, grate in food processor (or by hand, but it can get messy and teary).
  • drain juice from onion - place onion into mixing bowl.

  • divide result into 4 portions, and roll each into 9 inch long rolls, and skewer using metal skewers. Before skewering, check to see if the meat mixture breaks when bent. if it does, you'll need to add a little more flour and re-mix the meat mixture - otherwise it will fall off the skewer. Don't add too much flour. it's not a cake.
  • grill the meat until done over medium heat.

Steps:

  • Mix the chicken, beef, onions, 1/4 teaspoon salt and pepper. Form 3 thin patties about 4 1/2 inches in diameter.
  • Add the potatoes and remaining 1-ounce onions to a grinder and grind everything until the batter is smooth. Pour the batter in a bowl and add the flour, the remaining 1/2 teaspoon salt and the egg. Mix everything thoroughly. Form the batter into round thin pancakes.
  • Heat the oil in a pan. Place a potato pancake in the pan, topped with a meat patty and covered by more potato batter, covering all the meat. Fry the pancake on one side, about 1 minute. Flip it to the other side with a spatula, holding the top of the not-fried side with the fork. Make the fire smaller and cover the pan. Fry for 5 to 7 minutes, turning the pancakes over from time to time.

5 eggs
5 ounces flour
4 teaspoons oil

3 scallions
3 tablespoons oil
1 garlic clove
10 ounces vegetable broth
14 ounces ground beef
1 cup sour cream
3 teaspoons cayenne pepper
5 ounces feta cheese
1 teaspoon flour
salt

Steps:

  • Crepes: Beat the milk with the eggs, the flour and a dash of salt. Make 8 crepes in an 8 inches diameter skillet, using 1/2 teaspoons of oil for each one.
  • Filling: Wash and cut the scallions in slices and in a skillet, fry these in oil.
  • Mash the garlic and add it to the onion as well as 3/4 cup of vegetable broth and the ground beef.
  • Cook for 5 minutes. Drain the meat with a strainer and reserve the juices.
  • Season the meat with half of the sour cream and 1 teaspoons of pepper. Crumble the feta cheese and add it to the meat.
  • Place 3 tablespoons of the meat in each crepe. Fold the edges and roll.
  • Place the crepes on a greased pan.
  • Sauce: With the reserved juices from meat, complete with the rest of the broth to make 1 cup and bring to a boil.
  • Mix the remaining sour cream with the rest of the cayenne pepper, the flour, and add this to the "boiling" broth. Add salt to taste.
  • Pour this "sauce" over your crepe rolls and bake at 350ºF for 15-20 minutes.

  • Fry the sliced onions in oil until slightly golden.
  • Add ground lamb or beef, salt, and black pepper and fry until color changes.
  • Dissolve tomato paste in a glass of hot water and add to meat.
  • Cook for a few minutes until little water is left.
  • Wash rice twice and soak in salted warm water for 3-4 hours, then drain the water.

It's not Keema, but it's inspired by. I wanted something quick because it was late, but this took me nearly an hour anyway because of the chopping. I'm a slow chopper. It would be good with brown rice, but I thought I didn't have time to cook rice so we just mashed our potatoes in our bowl and stirred it all together and it was delicious like that. Some might like to add pepper sauce to theirs.

2 tablespoons olive oil
1 onion, diced
3 garlic cloves
2 tablespoons curry powder
2 teaspoons cumin
1 large potato, cut into 1/2-inch dice
1 1/2 lbs ground turkey
2 (14 ounce) cans diced tomatoes (with their juice)
2 teaspoons cinnamon
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 lemon, juice of
1 cup plain yogurt (use whole yogurt, it's still way less fat than sour cream)

Steps:

  • In a large skillet, heat the oil over medium heat.
  • Heat the onion and garlic until beginning to soften.
  • Add curry powder and cumin.
  • Cook, stirring ocassionally until spices are aromatic and onion is transparent, about 7 to 10 minutes.
  • Meanwhile, place the potatoes in a microwave-safe bowl. Loosely cover with waxed paper. Microwave in 30 second intervals until beginning to soften, about 5 intervals (they will finish cooking in the skillet).
  • Add ground turkey (or ground meat of your choice) to skillet. Break into crumbles. Cook until no longer pink, stirring frequently.
  • Add diced potatoes.
  • Add tomatoes and juice.
  • Add cinnamon, salt, and pepper.
  • Stir a bit, but it's okay if everything is basically in layers.
  • When it's bubbling, reduce heat and cover. Cook for 12 to 15 minutes, stirring ocassionally, until potatoes are soft and flavorful. Add water or broth if it seems too dry.
  • Add lemon juice. Stir well.
  • Serve with a dollop of yogurt, or pass the yogurt for diners to add their own.

  • Add bouillon cube or powder until meat is thoroughly cooked.
  • Add the pasilla chili sauce and the cubed cream cheese.
