A cozy, hearty spinach and beef casserole with fresh mushrooms and melty jack cheese. You call it what you want, we call it Spinach Fandango.

1 lb ground beef (80/20 or leaner)
1 medium onion, diced
8 oz fresh button mushrooms, sliced
1 clove garlic, minced
2 - 12oz packages of frozen spinach
salt and pepper to taste
1/2 cup long grain white rice, measurement based on dry (or rice of your choice) prepared according to package directions.
1 tsp dried oregano
1 cup sour cream
1 Tbs butter
3/4 cup milk or cream
8 oz shredded Monterrey Jack Cheese

Steps:

  • Preheat oven to 350F.
  • In a large skillet or dutch oven, combine the 1lb ground beef, 1 diced onion, 8oz fresh sliced mushrooms, 1 clove of minced garlic, and 1 tsp oregano and cook over medium heat until meat is browned and the vegetables are softened and fragrant.
  • While the beef mixture is browning, microwave the frozen spinach to defrost it. I microwaved it in a microwave safe bowl for 4 minutes. Then, remove from the microwave and over the sink, press the spinach up against the sides of the bowl to extract excess liquid and drain off the liquid. You can also use cheesecloth or a sieve if you prefer.
  • Once the spinach is fully strained, add it to the browned beef mixture and toss to combine.
  • Next, combine the rice, 1 tsp oregano, 1 cup sour cream, 1 Tbs butter and 3/4 cup of milk in a small bowl and stir until combined and creamy. If the rice isn't warm and the butter doesn't melt, you can microwave it for 45 seconds.
  • Add the creamy rice mix to the beef and spinach mixture and then pour it all into a medium to large sized rectangular casserole dish and spread evenly to all sides.
  • Sprinkle 8 oz shredded Monterrey Jack Cheese evenly over the top of the casserole.
  • Bake for 35 - 40 minutes or until the casserole is bubbling and the cheese on top is melty and slightly browned.
  • Allow to rest for 5 minutes after removing from the oven before slicing.

3 ½ cups farfalle (bow tie) pasta, uncooked

  • Preheat the oven to 350 degrees F (175 degrees C). Bring a pan of lightly salted water to a boil. Add the pasta, and cook until tender, about 8 minutes.

1 cup coarse (#3) bulgur
Salt to taste
1 28-ounce can chopped tomatoes with juice
3 tablespoons extra virgin olive oil
3 plump garlic cloves, minced
1/4 teaspoon sugar
1/4 to 1/2 teaspoon ground allspice or cinnamon (to taste)
Freshly ground pepper
1 12-ounce bunch spinach, stemmed and washed thoroughly in 2 changes of water, or 2 6-ounce bags baby spinach
2 teaspoons dried mint or 1 tablespoon chopped fresh mint
1 1/2 cups cooked chickpeas (1 can, drained and rinsed) (optional)
2 ounces Gruyère, or 1 ounce each Gruyère and Parmesan, grated (1/2 cup)

Steps:

  • Bring 2 cups water to a boil in a medium saucepan. Add the bulgur and salt to taste, reduce the heat, cover and simmer 15 to 20 minutes, until the water is absorbed. Remove from the heat, uncover and place a clean dish towel over the pan, then replace the lid. Allow to sit undisturbed for 10 minutes or longer. Transfer to a large bowl.
  • Pulse the tomatoes with their juice in a food processor. Heat 1 tablespoon of the olive oil over medium heat in a large, wide skillet or a shallow 3-quart saucepan and add the garlic. Cook, stirring, until fragrant, about 30 seconds, and add the tomatoes, sugar, salt to taste, and allspice or cinnamon. Bring to a simmer, reduce the heat to medium-low, and simmer until the tomatoes have cooked down to a fragrant sauce, about 20 minutes. Taste, adjust salt and add freshly ground pepper.
  • Steam the spinach until it wilts, 1 to 2 minutes, rinse briefly with cold water and squeeze out excess water. Do this by the handful to get out all the water. Chop coarsely. Add to the bulgur. Add the mint and the chickpeas if using, 1 tablespoon of olive oil and 1/2 cup of the tomato sauce and toss together.
  • Preheat the oven to 350 degrees. Oil a 2-quart gratin or baking dish. Spread the bulgur mixture in the dish in an even layer. Top with the remaining tomato sauce. Sprinkle on the cheese. Drizzle on the last tablespoon of olive oil. Bake 30 minutes, or until the top is lightly browned. Remove from the heat and allow to sit for 10 minutes before serving.

I didn't want to throw away the spinach and it was too hot for soup, so I came up with this one-dish meal. It was very filling and low-fat. I calculated this on the WW website and it's 4 points per serving.

4 ounces gluten-free pasta, shell shaped (can use regular pasta)
1 lb 96% lean ground beef
1 large onion, thinly sliced
2 garlic cloves, minced
1 (6 ounce) can tomato paste
1 (14 1/2 ounce) can diced tomatoes
2 cups nonfat beef broth
1 teaspoon salt
1 teaspoon dried oregano
1 teaspoon dried basil
