Easy Summer Squash Casserole image

This easy summer squash casserole is made for variations - just choose one of the ingredients in each category to change up the flavor or use up what you have at home!

Number Of Ingredients 11

1 1/2 lb summer squash, sliced and blanched: yellow, patty pan, zucchini, or other variety
1/2 c diced onion
2 clove minced garlic
2 pinch salt and pepper
2 pinch dried herbs, like poultry seasoning, italian seasoning, herbs du provence, southwest seasonings, or other herb blend of your choice
1 to 1 1/2 c either fresh bread crumbs *or* cracker crumbs, such as ritz, cheez-its, or herb-flavored crackers
1 can(s) condensed cream soup, such as mushroom, chicken, celery, broccoli, or potato
2 eggs
1 c grated cheese: use cheddar, swiss, monterey jack, or even velveeta cut in cubes
1/4 c grated parmesan or romano cheese for topping (optional)
1/2 to 1 lb browned and crumbled beef or sausage (optional)

Steps:

  • 1. To blanch squash, drop the cut up squash into rapidly boiling salted water. Boil for 3 minutes after water has returned to a boil. Then quickly drain squash in a colander and immerse in ice water to stop cooking.
  • 2. Mix together the blanched squash, onion, garlic, salt and pepper, and dried herbs in a large bowl. Stir in breadcrumbs or cracker crumbs until all are well-coated.
  • 3. In another bowl, beat eggs into the cream soup; stir in the grated cheese and then mix the wet ingredients with the squash mixture.
  • 4. Turn mixture into a greased 2-quart casserole dish. Top with Parmesan or Romano cheese if desired. Bake at 350° for 35-45 minutes until set and nicely browned. Remove from oven before it dries out too much. Allow to cool 5 minutes before slicing.
  • 5. OPTIONAL: We have found that adding some browned crumbled meat to this dish makes it a hearty main dish. Italian sausage is our favorite, but we've also used ground beef and breakfast sausage. Experiment and make it your own!

This is a yummy, warming casserole that is meant to be a side dish, but since it has meat in it, can also be served as a main dish. This is the version I came up with after significantly reducing some of the heavier ingredients, that were in the original version I saw on Lucy Classic Cajun & Cuisine, a PBS cooking program. But don't let that scare you - this is not a spicy dish at all. I make this often in the end of summer to use up fresh squash. If you don't have both types of squash, just use 2 of whichever type you do have.

1 small summer squash, unpeeled, sliced into thick rounds (crookneck)
1 small green zucchini, unpeeled, sliced into thick rounds
1/4 cup water
1/4 cup butter (or less, to taste*) or 1/4 cup margarine (or less, to taste*)
1/2 lb lean ground beef
1 cup sweet onion, chopped (such Vidalia, Walla Walla, or Maui)
2 large eggs
1/2 cup Miracle Whip (light is OK) or 1/2 cup mayonnaise (light is OK)
1/2 cup cheddar cheese, shredded
2 cups cooked hot white rice (I use Jasmine or long grain)
1/2 cup Ritz cracker crumbs (or less to taste)
salt and pepper

Steps:

  • Cook sliced squashes in a small pot with the water until tender but not mushy; drain and return squash to the pot.
  • Add butter and allow it to melt in the pot and sauté all together for 10 minutes, stirring occasionally, over medium to medium-low heat.
  • Meanwhile, spray a large deep skillet with nonstick spray and cook the beef and onions.
  • Drain any fat, then season meat mixture with salt and pepper to taste.
  • Add the squash to the beef using a slotted spoon, and reduce heat to low.
  • Beat together eggs, then whisk in mayo- add this mixture to the skillet.
  • Stir in the cheese and the cooked rice.
  • Pour into a large oval casserole and sprinkle with enough cracker crumbs to cover.
  • Bake in a preheated oven at 350 F for about 15-20 minutes.
  • Note: The original version of this recipe called for a whopping 1 whole stick of butter!
  • I have always used at most the 1/2 stick and as little as 2 tablespoons.
  • -it is based on your preferences.
  • I also always use real, unsalted butter.

I was given this family favorite recipe almost 40 years ago. It's easy to prepare, cooks fairly quickly and the flavors of the ground beef, squash, tomatoes, onions & rice are beautiful together! Serve it with a simple salad and cornbread and you have a meal! And you don't even have to brown the ground beef!

8 -10 medium summer squash, sliced
1 lb lean ground beef
1/2 cup long grain rice, uncooked
1 medium onion, chopped
1 (8 ounce) can tomato sauce
1 (15 ounce) can diced tomatoes
1 teaspoon salt
1/2 teaspoon pepper
1 cup water

Steps:

  • Cut squash about 1/4 inch thick.
  • In a large skillet, layer ingredients in the following order: tomatoes, tomato sauce, onions, water and seasonings. Stir. Add squash, then rice. Crumble ground beef on top. (Steam will cook the ground beef & rice.) Bring to a boil, then cover, lower heat and simmer 50 minutes. Stir ocasionally. Add more water if needed.
  • Let sit 15 minutes before serving.

1/4 cup grated Parmesan (1 ounce)
2 tablespoons olive oil, divided
5 cups reserved Quick Meat Sauce (from Gnocchi with Quick Meat Sauce)
1/2 cup long-grain white rice
1/2 medium yellow onion, thinly sliced lengthwise
2 zucchini or summer squash, very thinly sliced
Salt and pepper

Steps:

  • Preheat oven to 475 degrees. Combine breadcrumbs, Parmesan, and 1 tablespoon oil. In a large cast-iron skillet, bring meat sauce to a rapid simmer over high. Stir in rice and remove from heat. Top with onion, then carefully arrange zucchini in a single, slightly overlapping layer. Season with salt and pepper, drizzle with remaining tablespoon oil, and top with breadcrumb mixture. Return to heat and bring to a simmer. Cover with foil and bake 10 minutes. Remove foil and bake until rice is cooked through and breadcrumbs are golden, about 10 minutes more. Let cool 5 minutes before serving.

1 tablespoon oil
3 medium yellow squash, sliced
1 small onion, sliced
1 garlic clove, minced
1 (14 1/2 ounce) can diced tomatoes, undrained (OR 1 pint fresh tomato, diced and 1/2 cup water)
1 teaspoon chili powder
1 teaspoon cumin
1 teaspoon smoked paprika
salt and pepper
1 cup cheddar cheese

Steps:

  • In a large skillet over medium heat, cook the ground beef until evenly brown. Drain and set aside.
