3 acorn squash, medium sized
1 lb ground beef
1 large sweet onion, minced
1 tablespoon garlic
1 teaspoon oregano
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
salt and pepper

Steps:

  • Cut your squash in half and take out the seeds. Then place on a roasting pan and bake at 375 degrees for 30 minutes. Once the squash is ready, stuff the squash with the beef filling and bake for another 15 minutes. Serve and enjoy!

Tips:

  • Choose the right acorn squash. Look for ones that are deep green in color and have a hard shell. Avoid any squash that has soft spots or bruises.
  • Cut the squash in half lengthwise. This will make it easier to stuff and cook.
  • Scoop out the seeds and pulp. Use a spoon to carefully scoop out the seeds and pulp from the center of each squash half.
  • Season the squash. Sprinkle the inside of each squash half with salt, pepper, and any other desired seasonings.
  • Prepare the ground beef filling. Brown the ground beef in a skillet over medium heat. Drain any excess grease. Add the onion, garlic, and celery and cook until softened. Stir in the tomatoes, tomato sauce, and Italian seasoning. Season with salt and pepper to taste.
  • Stuff the squash. Divide the ground beef filling evenly among the squash halves. Top with the shredded cheese.
  • Bake the squash. Place the stuffed squash halves on a baking sheet and bake at 350 degrees Fahrenheit for 30-35 minutes, or until the squash is tender and the cheese is melted and bubbly.
