4 cups water
2 tablespoons beef base
1 (8 ounce) can tomato sauce
1 tablespoon Worcestershire sauce

¼ teaspoon ground marjoram
5 large carrots, cut into rounds
4 medium potatoes, peeled and cubed
1 cup green beans, trimmed and cut into 1-inch pieces
3 tablespoons all-purpose flour

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir ground beef, onion, and garlic in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Drain and discard grease. 2 lb lean or extra lean ground beef
salt and pepper to taste
1 medium cooking onion, chopped
6 carrots, cut in small, consistent sized pieces
5 medium potatoes, peeled and cut (1 - 1 1/2")
1 pkg frozen green peas (small pkg)
water to cover beef
1 can(s) beef broth (plus 1 can water)
1 c diced tomatoes, drained of liquid
all purpose flour
bisquick or other similar biscuit mix, follow directions

Steps:

  • 1. In a 3 quart pot, heat meat slowly on stove till browned, NOT fried. I think Mum said med. heat and adjust lower, if needed. Add a little salt and pepper.
  • 2. When meat is browned, cover with water to about 1/2" over the meat, add onion and simmer for 20 mins. Mum never drained the meat first. (watch and stir if necessary to prevent sticking).
  • 3. Add both the can of broth and can of water and simmer for ½ hr - 45 mins. Stir occasionally to prevent any sticking.
  • 4. Add cut veggies and a little more salt and pepper to taste. Let simmer slowly till all veggies are done, about 45 mins to 1 hr. Thicken with flour gradually to consistency you prefer.
  • 5. This is a THIN stew so you need something to sop up the juices. Make small to medium size Bisquick dumplings and plop on top of stew about 15 mins before you eat. Make sure you have enough liquid in the stew, because dumplings will absorb moisture. You turn back the temp so that the dumplings basically steam. Cover for 15 mins and serve. Crusty bread works too :)

1 cup dried pinto beans, un-soaked or 2 (16-ounce) cans pinto beans, rinsed and drained
2 tablespoons olive oil, divided
1 pound low-fat ground beef
1 teaspoon Spike seasoning
1 onion, chopped
1 tablespoon minced garlic
2 teaspoon dried Mexican oregano
1 tablespoon ground cumin
1 tablespoon dried cilantro, optional
3 cups homemade chicken stock, or 2 (14.5-ounce) cans chicken broth and reduce slightly to 3 cups
1 cup liquid from pressure cooking beans or 1 cup water
2 tablespoon tomato paste
1 (14.5 ounce) can petite diced tomatoes
1/2 cup sliced green onions
1/2 cup chopped fresh cilantro, plus more to taste
2 tablespoons fresh squeezed lime juice

Steps:

  • Put 1 cup dried pinto beans in pressure cooker with 2 teaspoons olive oil, add water to fill pressure cooker half full, lock lid, and pressure cook at high pressure 15 minutes. Start to time after high pressure is reached. Turn off heat and let pressure release naturally, about 15 minutes. When all pressure is released, drain beans into colander, reserving 1 cup bean cooking liquid. You can also use 2 cans pinto beans, rinsed well in a colander placed in the sink, then drained. While beans are cooking, heat 2 teaspoons olive oil in large heavy frying pan, add ground beef, and season with Spike seasoning, then saute until beef is well-browned, breaking apart with back of the turner as it cooks. When it's well browned, remove beef to a bowl. Heat 2 teaspoons more olive oil in frying pan, then add onion and saute about 5 minutes, or until onion is starting to brown. Add minced garlic and saute 2 minutes more, then add Mexican oregano, cumin, and dried cilantro and saute about 2 minutes more. When beans have finished cooking and been drained into a colander, add cooked ground beef to pressure cooker, followed by onion/garlic/herb mixture. Add chicken stock to frying pan and simmer a minute, scraping off any browned bits and adding that liquid to pressure cooker, along with 1 cup reserved bean cooking liquid or water, if using canned beans. Add beans, tomato paste and can of tomatoes to pressure cooker. Lock lid and pressure cook for 2 minutes at high pressure. Start to time after high pressure is reached. Turn off heat and let pressure release naturally, about 15 minutes. When pressure is released, add sliced green onion, chopped fresh cilantro, and lime juice, turn heat on and cook with lid off for about 5 minutes. Serve hot, with additional chopped cilantro to add at the table if desired.

2 pounds ground beef
6 medium potatoes, peeled and cubed
1-1/2 pounds carrots, sliced
4 cups water
1 can (15-1/4 ounces) whole kernel corn, drained
1 can (15 ounces) peas, drained
1 can (14-1/2 ounces) cut green beans, drained
2 medium onions, chopped
1 cup ketchup
3/4 cup medium pearl barley
1 tablespoon Worcestershire sauce
Dash vinegar
Salt and pepper to taste

Steps:

  • In a soup kettle or Dutch oven, cook beef over medium heat until no longer pink; drain. Add the potatoes, carrots and water. Bring to a boil. Reduce heat; cover and simmer for 20 minutes or until vegetables are tender. Add remaining ingredients. Cover and simmer for 1 hour.

1 lb ground beef
1 lb bulk port sausage
2 can(s) diced tomatoes (14 1/2 oz. each)
2 medium green peppers, cut into 1/2" pieces
2 c thinly sliced celery
1 c chopped onion
6 medium zucchini, halved & cut into 1/2" slices
1 c tomato juice
1 tsp italian seasoning-i use herb de provence
1 tsp dried oregano
grated parmesan cheese

Steps:

  • 1. In dutch oven or large saucepan, over medium heat, cook beef & sausage until no longer pink; drain & set aside.
  • 2. Drain tomatoes, reserving juice; set tomatoes aside. In the same pan, combine the peppers, celery, onion & reserved juice. Cover & cook over medium heat for 10 minutes.
  • 3. Add meat, tomatoes, zucchini, tomato juice & seasonings. Cover & cook 15 minutes or until zucchini is tender, stirring occasionally.
  • 4. Serve, garnish with cheese.

1 cup vegetable broth
½ cup tomato-vegetable juice cocktail
2 tablespoons sherry wine
2 teaspoons Worcestershire sauce
4 potatoes, peeled and diced
1 (8 ounce) can whole kernel corn, drained
1 cup frozen green peas, thawed
1 cup diced carrots
1 (4.5 ounce) can mushroom pieces and stems, drained
1 teaspoon dried celery flakes
1 teaspoon salt
½ teaspoon ground black pepper
½ teaspoon dried marjoram
½ teaspoon dried thyme

Steps:

  • Cook and stir ground beef in a skillet over medium heat with onion and garlic until the meat is completely browned, about 10 minutes. Drain excess grease.
  • Stir cream of mushroom soup, vegetable broth, vegetable juice cocktail, sherry, and Worcestershire sauce together in a slow cooker.
