This recipe came from my mom who got it out of an old (1970's)cookbook of hers. I made it one night and just love it. It's perfect on a fall or winter night served with some fresh bread. This recipe makes quite a lot, and we never seem to have much left over.

1 lb lean ground beef
1 cup onion, chopped
6 cups water
6 teaspoons beef bouillon
1 (29 ounce) can crushed tomatoes or 1 (29 ounce) can diced tomatoes
1/2 cup orzo pasta
1 1/2 cups frozen peas corn and carrot mix
salt and pepper

Steps:

  • Brown ground beef with onion.
  • Drain.
  • In large pot place meat and onion, water, bouillon, and tomatoes.
  • Bring to a boil; cover and turn heat down to low.
  • Let simmer for 20 minutes.
  • Stir in orzo and frozen veggies, and salt and pepper.
  • Allow to simmer an additional 15-20 minutes or until orzo is done.
  • Serve hot with warm, buttered bread.

1 1/2 lbs round steaks or 1 1/2 lbs chuck steaks, cut into small cubes
2 cups chopped carrots
1/2 cup diced celery
1 large onion, chopped
4 quarts water
3 tablespoons beef base
2 tablespoons tomato paste
salt & fresh ground pepper
8 ounces orzo-small shell pasta
grated parmesan cheese

Steps:

  • In a large soup pot, brown the beef cubes on all sides with the onion. Season with salt and pepper. Add the water Bring to a boil. Skim off any residue that is on the top of the water. Lower the heat to medium and cook for an hour.
  • Add the beef soup base according to instructions on the brand you use. Add the carrots and celery. Continue to simmer on medium, while the pan is covered for an additional 30 minutes,or until the vegetables are tender.
  • Taste and add more pepper and salt if needed. In another pan cook the pasta till just done as instructed on the package. Drain and add to the soup pot. Serve with Parmesan cheese on the side.

1 onion, unpeeled, halved

1 lb mushroom, trimmed and coarsely chopped

  • Heat 1 tbsp oil in a large heavy saucepan.
  • Brown the beef; add the onion and brown lightly on the cut side.

1/4 teaspoon pepper
8 ounces dried orzo pasta (1 cup)
1 (10 ounce) package frozen chopped spinach, thawed
