Not sure if this is on here and I overlooked it, but I couldn't find it! This is our FAVORITE warm dip.....hubby, kiddos, friends, they all love it! Make a crockpot full for your next party.....serving size is a guesstimate!

1 lb velveeta monterey jack pepper cheese
1/2 cup heavy cream
1 cup milk
3/4 cup pico de gallo
1/4 teaspoon cayenne pepper
1 tablespoon grated parmesan cheese
5 ounces frozen creamed spinach (Stouffers)

Steps:

  • Use a double boiler.
  • Cut cheese into cubes.
  • Place all ingredients EXCEPT spinich into double boiler and heat until melted through, stirring often.
  • Remove from heat and add spinich, stir well.
  • Serve immediately or sprinkle a little extra parmesan on top and put it under the broiler for a minute or two. You can also put it in a crockpot on warm to keep it soft for an extended period of time.
  • Serve with tortilla chips and enjoy!

1 (14 ounce) can tomato and green chile mix (I use Rotel)

Steps:

  • Place cubes of velveeta in a microwave safe dish.
  • Pour can of tomatoes and chile on top of cheese cubes (do not drain).
  • Microwave on high for 3 minutes and stir.
  • Microwave for 2 additional minutes.
  • You are done!
  • Note sauce will thicken in about 10-15 minutes after it begins to cool.

1 1/2 lbs ground beef (LEAN)
2 (1 ounce) packages taco seasoning
2 (15 ounce) cans pinto beans
2 dozen corn tortillas
vegetable oil
shredded cheddar cheese
shredded lettuce
chopped onion
chopped tomato
your favorite salsa

Steps:

  • In a large skillet completely cook the ground beef, no need to drain. Add in the Taco Seasoning and the 2 cans of pinto beans with the juice.Mix and then let it simmer for about 10-15 minutes or until it is heated all the way through.
  • In a small or medium skillet add enough oil to fry the shells. Wait until oil is hot and start frying your tortillas to desired donness. Place tortillas on a paper towel to drain off excess oil.
