BAKED POTATOES ON THE GRILL

Baked Potatoes on the Grill image

This is a recipe I use to throw a potato on the grill while I am grilling. I like how it makes the skin crispy and the center soft. Use whatever toppings you like, as in butter, sour cream, cheese, and bacon bits.

Time 45m

Yield 6

Number Of Ingredients 7

aluminum foil
1 ½ tablespoons butter
6 medium unpeeled potatoes, washed and cut into thick slices
1 onion, sliced
1 green bell pepper, cut into long strips
2 teaspoons garlic powder
salt and ground black pepper to taste

Steps:

  • Preheat an outdoor grill for high heat; close cover. Lay out three 18-inch long pieces of aluminum foil on a work surface, dull side facing up.
  • Smear 1/2 tablespoon butter in the middle of the first piece of foil. Add 1/3 of the potato slices, onion, and bell pepper. Sprinkle with 1/3 of the garlic powder; season with salt and pepper. Fold up the edges of the foil over the vegetables to create an almost leak-proof packet, making sure to seal the edges. Repeat with last 2 pieces of foil and the remaining ingredients to make 2 more packets.
  • Reduce the heat of the grill to medium. Place foil packets on the grate; cook until potatoes are tender, 20 to 30 minutes.

Tips:

  • Choose the right potatoes: Waxy potatoes like Yukon Golds or Red Bliss hold their shape better than starchy potatoes when grilled, making them ideal for foil packets.
  • Wash and dry the potatoes thoroughly: This helps prevent the potatoes from sticking to the foil and ensures they cook evenly.
  • Cut the potatoes into uniform pieces: This helps them cook evenly. For smaller potatoes, you can leave them whole.
  • Toss the potatoes with oil, seasonings, and herbs: This adds flavor and helps prevent the potatoes from sticking to the foil.
  • Wrap the potatoes tightly in foil: Make sure there are no holes in the foil, as this will allow steam to escape and prevent the potatoes from cooking properly.
  • Place the foil packets on a hot grill: Cook the potatoes over medium heat for about 30 minutes, or until they are tender when pierced with a fork.
  • Open the foil packets carefully: Be careful of the steam that escapes when you open the foil packets, as it can be very hot.

Conclusion:

Grilling potatoes in foil on a gas grill is a simple and delicious way to enjoy this versatile vegetable. By following these tips, you can ensure that your grilled potatoes are cooked perfectly every time. Serve them as a side dish or main course, or add them to your favorite recipes. Grilled potatoes are a healthy and flavorful addition to any meal.
