Garlic-Grilled Chicken with Pesto Zucchini Ribbons image

The first time I substituted zucchini noodles for regular pasta, it was because I was trying to reduce carbohydrates and calories. Now I make them because we love the flavor and texture they bring to dishes. This dish is just as delicious if you substitute shrimp for the chicken. -Suzanne Banfield, Basking Ridge, New Jersey

Tips:

  • Choose tender zucchini: Select medium-sized zucchini that are firm to the touch and have smooth skin. Avoid zucchini that are too large or have blemishes.
  • Slice zucchini evenly: Cut the zucchini into even slices to ensure even cooking. You can use a mandoline slicer or a sharp knife.
  • Marinate the chicken: Marinating the chicken in a flavorful mixture of peanut butter, soy sauce, and spices helps infuse it with delicious flavors.
  • Use a hot grill: Preheat your grill to a high temperature to get a nice sear on the zucchini and chicken. This will help create a smoky flavor and prevent the zucchini from sticking to the grates.
  • Don't overcrowd the grill: Make sure to leave enough space between the zucchini and chicken pieces on the grill to allow for even cooking.
  • Cook the zucchini and chicken until tender: Cook the zucchini until it is slightly charred and tender, and the chicken is cooked through. Be careful not to overcook the zucchini, as it can easily become mushy.
  • Serve immediately: Grilled zucchini and peanut chicken is best served immediately, while it is still hot and flavorful.

Conclusion:

Grilled zucchini with peanut chicken is a delicious and healthy meal that is perfect for summer gatherings. The zucchini is tender and flavorful, while the chicken is juicy and packed with peanut butter flavor. This dish is sure to be a hit with your family and friends.
