- Preheat the grill for medium heat.
- Cut the squash horizontally into 1/4 inch to 1/2 inch thick slices so that you have nice long strips that won't fall through the grill.
- Heat olive oil in a small pan, and add garlic cloves. Cook over medium heat until the garlic starts to sizzle and become fragrant. Brush the slices of squash with the garlic oil, and season with salt and pepper.
- Grill squash slices for 5 to 10 minutes per side, until they reach the desired tenderness. Brush with additional garlic oil, and turn occasionally to prevent sticking or burning.

- Arrange potatoes, zucchini& squash, alternating each on 24x18 inch double thickness of heavy-duty aluminum foil.
- Place onion rings over the top of vegetables.
- Sprinkle Zesty Italian dressing over the top.
- Sprinkle with salt, pepper and Italian seasoning.
- Slice the butter into thin slices and lay over the top.
- Add ice cubes.
- Wrap tightly (a drugstore wrap).

- Heat grill to high.
- Brush zucchini and yellow squash with 1 tablespoon oil and season with 1/4 teaspoon salt and 1/4 teaspoon pepper. Grill cut side down until light golden brown, 3 to 4 minutes. Flip and continue grilling until just thoroughly cooked, 4 to 5 minutes longer. Remove from grill and cut crosswise into 1/2-inch thick slices.
- Whisk together remaining 1/4 cup oil, lemon juice, lemon rind, red pepper flakes and remaining 1/4 teaspoon salt and 1/4 teaspoon pepper in a large bowl. Add zucchini, yellow squash and basil; toss to coat. Cover and let sit at room temperature at least 30 minutes and up to 2 hours before serving.
GRILLED ZUCCHINI AND YELLOW SQUASH WITH GREEK SPICES

- Cut the zucchini and yellow squash lengthwise into 1/4 inch slices. Arrange on a platter or in a baking dish and sprinkle both sides with the garlic, oregano, mint, hot pepper flakes, and lots of salt and pepper. Drizzle 2 tablespoons oil over them, turning the slices several times to coat both sides. Let marinate for 15 minutes. Set up the grill for direct grilling and preheat to high. If using a vegetable grate, preheat it as well. If using a gas grill, place the wood chips, if desired, in the smoker box or in a smoker pouch and preheat until you see smoke. When ready to cook, if using a charcoal grill, toss the wood chips, if desired, on the coals.
