One 2-pound beef tenderloin, halved and cut into 1-inch slices
Garlic-Mustard Glaze, recipe follows
4 cloves garlic, finely chopped
1/4 cup grainy mustard
2 tablespoon Dijon mustard
2 teaspoons Spanish paprika
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 tablespoon low-sodium soy sauce
2 tablespoons white wine vinegar
1 tablespoon honey

Steps:

  • Heat grill to high. Skewer 2 pieces of the beef onto 2 skewers so that the meat lies flat. Brush the meat liberally on both sides with the Garlic-Mustard Glaze. Grill the meat for 2 to 3 minutes per side until golden brown and cooked to medium-rare doneness, brushing with the remaining glaze while grilling. Remove from grill and serve.
  • Whisk together all ingredients in a small bowl. Cover and let sit at room temperature for 30 minutes before using.

2 lbs top sirloin steak (Note 1)
½ cup red wine
¼ cup soy sauce
2 tablespoons cup olive oil
2 tablespoons Worcestershire sauce
2 tablespoons fresh lemon juice
4-5 cloves garlic (grated)

Steps:

  • Cut the steak into 1.5-inch thick cubes. (TIP: try to make them the same size for even cooking.) Place the meat in a large bowl, or ziplock bag.
  • In a 2-cup measuring cup, combine red wine, soy sauce, olive oil, Worcestershire sauce, lemon juice and garlic.
  • Pour the marinade over the meat and mix well. Marinade for at least 2 hours, or up to 8 hours in the fridge. Bring it to room temperature before cooking, about 1 hour on the counter.
  • When ready to cook, preheat the gas grill on high for at least 15 minutes.
  • Meanwhile, thread the steak cubes onto the skewers.
  • When the grill is thoroughly heated, grill the skewers for about 2 minutes on each side over medium high heat, or until desired doneness is reached, about 8 minutes total for medium.
  • Remove the skewers onto a plate, cover with foil and rest for 5 minutes before serving.

2 lb sirloin or ribeye, cut into 1-1/4 inch cubes
1 large yellow onion, peeled and quartered 1-½ squares
1 large red onion, peeled and quartered into 1-½ squares
1 large red pepper, seeded and quartered 1-½ squares
1 large green pepper, seeded and quartered 1-½ squares
3 Tbsp good quality olive oil
1 Tbsp fresh lemon juice
2/3 c red or blush wine (deep reds will tend to dye your vegetables)
1/2 tsp dried oregano
4 bay leaves
4 clove garlic, minced
1/8 tsp ground black pepper
1/8 tsp coarse salt

  • 1. Pre-soak 12 8-inch wooden skewers in water for about 2 hours.
  • 2. Put all the vegetables into a marinating container and add in the cubed beef. Add in the remaining ingredients and stir or toss to coat evenly. Place into your refrigerator for at least 2 hours, no more than 3.
  • 3. Remove from refrigerator and in alternating layers add the beef and vegetables to the skewers. Throw out any leftover marinade and you can either grill these skewers over medium high heat or broil at 325? in your oven. In either case cook skewers until lightly browned, on one side and turn once in the process to evenly brown the other side. Make sure the beef is cooked to your desired doneness, or at least 120 degrees for rare up to 155 degrees and up for well done.
