I got this recipe from a guy I fish with up north, I love them; they are absolutely great, and I can't get enough of them. We call them 'Scooby Snacks' and usually have them around the campfire. Be sure your foil is good and sealed. When done, it will be puffed up like a pillow! You can use any white, flaky fish in place of walleye fillets.

1 pound walleye fillets
2 12x12-inch squares aluminum foil
5 tablespoons butter, melted
1 pinch seasoned salt, or to taste
1 pinch garlic and herb seasoning blend (such as Mrs. Dash®), or to taste

Steps:

  • Preheat an outdoor grill for medium-high heat.
  • Place walleye, skin-side down, in the center of one aluminum foil square. Brush fillet with butter; season with seasoned salt and garlic and herb seasoning blend. Place second aluminum foil square over the fish and fold edges of the two pieces of foil together to form a secure packet.
  • Cook on the preheated grill until fish flakes easily with a fork, about 7 minutes per side.

6 -8 ounces walleye, fillets- (4)
2 -3 tablespoons olive oil
2 -3 tablespoons fresh lemon juice
1 teaspoon thyme
1 teaspoon kosher salt
1 teaspoon fresh ground pepper
1 -2 tablespoon lime juice

Steps:

  • Mix Olive Oil and lemon juice together. Sprinkle fillets with thyme, salt and pepper and marinade in oil and juice about 10-15 minutes. I used a George foreman indoor grill sprayed with canola oil so the fillets would not stick and both sides cooked simutaneously. I cooked about 5 mins and then used a spray bottle and spritz the fillets with the lime juice and resumed cooking for about 3 more minutes.

  • GRILL DIRECTIONS: Heat grill. Cut one 12-inch-square piece of heavy-duty foil. With tip of sharp knife cut 2-inch slits every 2 inches across foil. Spray foil with nonstick cooking spray.
  • In small bowl, combine butter, chives, orange juice and 2 tablespoons of the pecans; mix well.
  • When ready to grill, place foil on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Sprinkle walleye fillets with salt and pepper.
