Great grilled turkey! My grill is an old one that has a hinged top. I open all of the vents and prop the lid open about 2 to 3 inches with a stick...man does it get hot! Do not spill the juices and wine on the coals, as they are extremely flammable.

1 large onion, diced
1 (750 milliliter) bottle red wine
salt and pepper to taste
12 pounds whole turkey

Steps:

  • In a pot style grill, fill the bottom with a 5 pound bag of charcoals. Light the charcoal, and when ready, spread to cover the bottom of grill.
  • Wash the turkey down and stuff with onion. Rub the exterior down with salt and pepper.
  • Place the turkey in a deep aluminum roasting pan. Place the pan on the grill's grate. Pour wine over the turkey. Cover the top of the turkey with foil.
  • Cover the grill with the lid and open the vents. Grill the turkey for 60 to 90 minutes, or until meat is to your liking. Baste frequently. You might need to add water to the pan if the wine evaporates.

This isn't really a "recipe" per se, just a great way to use up some of the Thanksgiving leftovers! This IS good grilled, but I also do this non-grilled on sourdough bread or a croissant with mayo and lettuce. Yummm!!

8 slices sourdough bread
6 tablespoons cranberry sauce
8 ounces cheddar cheese, use less if desired (2 cups grated)
8 ounces roasted turkey breast
1 tablespoon softened lightly-salted butter

Steps:

  • Spread 1 1/2 tablespoons of cranberry sauce on each of 4 slices of bread. Add 2 ounces of cheddar onto each piece, followed by two ounces of roasted turkey. Be sure to mash down the cranberry sauce and the cheese.
  • Cover each prepared bread slice and evenly butter the top of each sandwich. Place each sandwich butter side down in a frying pan over medium heat. While the first side is grilling, butter the second side of bread. Cook until golden and crusty, about 3-4 minutes. Carefully turn and cook until second side is golden, about 2-3 minutes more.

1/4 cup light brown sugar
1 fresh turkey (12 pounds)

Steps:

  • Dissolve the salt and sugar in 2 gallons cold water in a large (at least 16 quart) stockpot or a clean bucket. (You can also add fresh herbs like rosemary, thyme or bay leaf, or aromatics like onions and garlic.) Add the turkey, cover and refrigerate, or set in a very cold place (that stays somewhere between 32 to 40 degrees F) for at least 12 hours and up to 24 hours.
  • Remove the turkey from the brine 1 hour before grilling. Rinse well under cold water and pat dry to remove the salt.
  • Prepare a charcoal grill for indirect grilling. The temperature inside the grill should be 350 degrees F.
  • Place the turkey on the grill, cover and grill until an instant-read thermometer inserted in the thigh registers 175 degrees F, 2 hours 15 minutes to 2 1/2 hours. Let the turkey rest 1 hour before carving.
