3 tablespoons soy sauce
1 tablespoon unseasoned rice vinegar
1 teaspoon honey
1 tablespoon toasted sesame oil
2 teaspoons finely grated fresh ginger
1 teaspoon minced fresh garlic
2 ahi tuna steaks (about 1 pound)
2 tablespoon olive oil
kosher salt
freshly ground black pepper
sesame seeds (to taste)
thinly sliced green onion (to taste)

Steps:

  • Make dipping sauce. In a medium bowl whisk together soy sauce, rice vinegar, and honey until honey dissolves. Whisk in sesame oil, ginger, and garlic until emulsified. Leave at room temperature or refrigerate if desired. (recipe note #1)
  • Preheat a gas grill (or charcoal grill) to high. (recipe note #2)
  • Rinse tuna steaks and pat dry with paper towels. Rub all sides of tuna with olive oil and season with salt and pepper. Grill tuna 2 minutes per side, until seared on the outside and rare in the center. (If you prefer a cooked center, cook an additional ~2 minutes per side.) Transfer tuna to cutting board. With a thin, sharp knife, thinly slice tuna across the grain (1/4 to 1/2-inch thick slices). Sprinkle with sesame seeds and sliced green onion. Serve with dipping sauce.

2 Tbs. olive oil
2 garlic cloves, minced
1 medium onion, sliced
2 tbs. capers
1/4 cup pitted and coarsely chopped black olives
1 (14-oz. can) whole plum tomatoes with their juice, crushed by hand
2 Tbs. chopped fresh parsley
salt and pepper to taste

Steps:

  • Preheat grill. Brush both sides of each tuna steak with 2 teaspoons olive oil and season with salt and pepper. Place on the hot grill and cook for 2 minutes per side for rare. Saute onions and garlic in 2 tablespoon olive oil until soft and fragrant. Add tomatoes, olives, parsley and capers and simmer until tomato juice evaporates. Season to taste. 2 1 1/4-inch-thick tuna steaks
¼ cup spicy brown mustard
1 teaspoon mustard powder
3 tablespoons white sugar

Steps:

1/4 cup soy sauce
3 tablespoons brown sugar
3 tablespoons olive oil
2 tablespoons white wine vinegar
2 tablespoons sherry

4 tuna steaks (6 ounces each)

Steps:

4 tuna steaks (about 2 pounds total weight)
Juice 1 lemon
2 tablespoons olive oil
2 large shallots, minced
1 small clove garlic, unpeeled and left whole
2 tablespoons butter
3 to 4 pounds sorrel
1/2 to 3/4 cup chicken stock
Coarse salt and freshly ground pepper to taste

Steps:

  • Wipe the tuna steaks dry with paper towels. Squeeze lemon juice on both sides, brush with oil and set aside.
  • Preheat broiler to high.
