1 medium white or yellow onion
Large lemon
6 to 8 cloves garlic, crushed
1/3 stick butter
Salt and ground black pepper
6 aluminum sheets, approximately 12 by 12 inches

  • Heat grill to medium-high heat.
  • Rinse fillets and pat dry. Slice onion into 1/8-inch rings, and set aside. Slice lemon into 1/8-inch rings, remove seeds and set aside.
  • Rub 1 clove of crushed garlic over the fillet. Place fillet in the center of the aluminum foil. Top with 1 pat of butter, 2 to 3 onion rings, then season with salt and pepper, to taste.   • Lightly oil the grate of your grill. Arrange lemon slices on the grate so they overlap slightly and form a shape slightly larger than your trout fillet.

  • Preheat a grill to medium-high heat.

1/4 cup chopped bell pepper
1/4 cup chopped onion

  • On a cutting board, pat the trout dry with paper towels, making sure to get inside the cavity.

1 (16-ounce) bottle Cajun marinade (recommended: A-1 Steakhunter)
1 (14.5 ounce) can diced tomatoes with green pepper, celery, and onion
1/4 teaspoon liquid smoke (recommended: Wright's)
1 tablespoon Cajun seasoning
1/4 cup real crumbled bacon
Butcher twine, 12 pieces, 6 to 8 inches long
8 slices thick-cut bacon

Steps:

  • Set up grill for direct cooking over medium heat. Oil grate when ready to start cooking.
  • Place trout in large zip-top bag and cover with marinade; reserve 1/4 cup of marinade for sauce. Marinate for 30 minutes.
  • In a small saucepan, combine reserved marinade, tomatoes, liquid smoke, Cajun seasoning, and crumbled bacon. Bring to a boil. Reduce heat and simmer for 5 minutes; set aside.

1/4 cup honey
1/4 cup Dijon mustard
1/2 pound asparagus, stems trimmed, ends peeled and cut into 2-inch pieces
1 cup cooked lentils
8 trout fillets, skin on
3/4 teaspoon salt
1/2 teaspoon freshly ground pepper
1/3 cup olive oil
4 tablespoons unsalted butter
1 cup walnuts
3 tablespoons plus 1/2 cup balsamic vinegar
1 pound baby spinach, well rinsed and spun dry

Steps:

  • In a small bowl, whisk together the honey and mustard to form a glaze. Set aside.
  • Prepare an ice-water bath in a large bowl and bring a medium pot of salted water to a boil. Blanch the asparagus until tender, 6 minutes. Drain and refresh them in the ice water to preserve their color. Drain again and set aside.
  • Heat the lentils over a low flame and keep warm.
  • Spray a grill or grill pan with nonstick spray and preheat until it's very hot (if using a grill pan, heat for at least 4 minutes). Dry the fillets and season the flesh sides with 1/2 teaspoon of the salt and 1/4 teaspoon of the pepper, then brush both sides with the olive oil.   • Melt 3 tablespoons of the butter in a large saute pan over medium heat. Add the walnuts and toast for about 3 minutes, shaking the pan often to prevent burning. Season the nuts with 1/4 teaspoon salt, 1/4 teaspoon of black pepper, and 3 tablespoons of the balsamic vinegar. Cook for 3 to 5 minutes, until the vinegar has reduced to a thick syrup that coats the nuts. Add the remaining tablespoon of butter and stir for an additional minute. Turn the flame down to low and add the asparagus.
  • In a small saucepan, bring the remaining 1/2 cup of balsamic vinegar to a boil. Cook for about 3 minutes, until it has reduced down to 2 tablespoons.
  • Turn the flame off under the asparagus-walnut mixture and add the baby spinach along with a drizzle of the balsamic glaze. Gently toss to combine, and allow the heat of the pan to wilt the spinach.
  • Plate the salad by creating a small bed of the spinach-asparagus mixture in the center of the plate, surrounded by 3 dollops of warm lentils. Place 2 trout fillets, skin side up, on top of the spinach mixture. Drizzle with the balsamic glaze.

8 (4 ounce) salmon fillets
1/2 cup peanut oil
4 tablespoons soy sauce (regular or low sodium)
4 tablespoons balsamic vinegar
4 tablespoons green onions, chopped
3 teaspoons brown sugar
2 garlic cloves, minced
1 1/2 teaspoons ground ginger
2 teaspoons crushed red pepper flakes
1 teaspoon sesame oil
1/2 teaspoon salt

Steps:

  • Place salmon fillets in dish for marinating.
  • In a bowl combine all other ingredients.
  • Pour over fish and marinate in fridge for 4-6 hours.
  • Grill fillets on BBQ until cooked to your liking.

1/2 c soy sauce
1/2 c dry sherry
1/4 c vegetable oil
1 Tbsp lime or lemon juice
1 clove garlic, minced
4 trout, dressed

Steps:

  • 1. Prepare marinade by combining first 5 ingredients.
  • 2. Pour marinade over trout in a shallow dish. Cover dish with plastic wrap, and place in refrigerator for 1 hour, turning once.
  • 3. Remove trout from marinade and grill over medium-hot coals until done (10 to 15 minutes).

4 (7 ounce) whole trout
vegetable oil, for brushing
salt and pepper
2 ounces butter
2 ounces cashew nuts, shelled
2 garlic cloves, finely chopped
chopped parsley, a good handful
1 lemon, juice of

Steps:

  • Preheat hot grill or barbecue. Slash skins of fish deeply three times on each side to let the heat permeate the flesh. Remove the heads if you like.
  • Brush the fish lightly with oil, and season with salt and pepper both inside and out.
  • Cook under grill or on barbecue for 4 minutes on each side, or until the skin is browned and the flesh feels firm.
  • Melt the butter in a wide shallow pan, and fry the nuts quickly until toasted. Add the garlic and parsley, and fry the mixture briefly until the parsley darkens slightly.
  • Add the lemon juice with more salt and pepper to taste and heat through.
  • Put each trout on a warm serving plate, and spoon over cashew and garlic butter.

1/4 cup fresh lemon juice
2 tablespoons butter or 2 tablespoons margarine, melted
2 tablespoons vegetable oil
2 tablespoons fresh parsley, chopped
2 tablespoons sesame seeds
1 tablespoon hot pepper sauce, such as Tabasco
1 teaspoon fresh ginger, grated
1/2 teaspoon salt
4 (1 lb) brook trout, whole, cleaned

Steps:

  • Prepare your grill for grilling. In a shallow dish, mix the lemon juice, butter, oil, parsley, sesame seeds, hot sauce, ginger and salt. With a fork, pierce the skin of each fish in several places. Roll the fish in the lemon juice mixture to coat thoroughly. Leave the fish in the marinade, cover the dish, and refrigerate for 30 minutes to 1 hour, turning the fish occasionally.
  • Remove the fish, reserving the marinade, and place them in a hand-held, hinged grill (I use that method because I'm terrible at turning the fish on the grill without mangling them). Brush the fish with the marinade. Cook about 4 inches from the hot coals for 5 minutes. Turn, brush with marinade, and cook for 5 minutes longer, or until the flesh appears opaque and flakes easily.
