3 tablespoons good olive oil
3 cups yellow onions, chopped (2 onions)
1 tablespoon minced garlic (3 cloves)
4 cups chicken stock, preferably homemade
1 (28-ounce) can crushed tomatoes, preferably San Marzano
Large pinch of saffron threads
Kosher salt and freshly ground black pepper

1/2 cup orzo
1/2 cup heavy cream
Grilled Cheese Croutons, recipe follows
4 (1/2-inch-thick) slices country white bread
2 tablespoons unsalted butter, melted
4 ounces Gruyere cheese, grated

Steps:

  • In a large pot or Dutch oven such as Le Creuset, heat the olive oil over medium heat. Add the onions and cook over medium-low heat for 15 minutes, stirring occasionally, until golden brown. Add the garlic and cook for 1 more minute. Stir in the chicken stock, tomatoes, saffron, 1 tablespoon salt and 1 teaspoon pepper. Bring the soup to a boil, then lower the heat and simmer for 15 minutes.
  • Meanwhile, fill a medium pot with water, add 2 teaspoons salt and bring to a boil. Add the orzo and cook for 7 minutes. (It will finish cooking in the soup.) Drain the orzo and add it to the soup. Stir in the cream, return the soup to a simmer and cook for 10 more minutes, stirring frequently.
  • Serve hot with Grilled Cheese Croutons scattered on top.
  • Heat a panini grill. Place the four slices of bread on a cutting board and brush lightly with the melted butter, being sure to butter the corners. Turn the slices over and pile Gruyere on two of the slices. Place the remaining two slices of bread on top of the Gruyere, buttered sides up.
  • Grill the sandwiches on the panini grill for about 5 minutes, until nicely browned. Place on a cutting board, allow to rest for 1 minute and cut into 1-inch cubes.

Steps:

  • To make the grilled cheese sandwich: In a small mixing bowl, combine butter, Parmigiano-Reggiano, and 1 tablespoon Dijon mustard. Spread a liberal amount of butter mixture on 2 slices of bread. Flip over slices and spread some Dijon mustard on other sides. Place Cheddar cheese on the Dijon side of both slices. Place bacon on top of cheese on 1 slice and sliced tomatoes on top of cheese on other slice. Combine both sides together and place in a medium skillet over medium heat. Cook until golden brown and crusty. Flip sandwich and place a weighted cast iron pan on top. Cook until golden brown and cheese has melted. Remove from skillet and serve immediately with tomato soup.
  • To make the soup: Puree the crushed tomatoes and set aside. In a heavy stainless steel pot, heat basil olive oil. Add shallots and cook until soft. Add garlic, thyme, chopped basil, bacon, and tomato paste and continue to cook, stirring with a wooden spoon. Add tomato puree, cream, chicken broth, and salt and sugar, to taste. Bring to a simmer. Pour soup into bowls and garnish with chiffonnade basil. Serve immediately with grilled cheese sandwich.

2 onions, peeled and sliced into thin wedges
EVOO, for liberal drizzling
2 tablespoons fresh thyme leaves
Salt and freshly ground black pepper
2 heads garlic, ends trimmed to expose cloves
2 large sweet red peppers
2 cups chicken stock
One 28- to 32-ounce can fire roasted tomatoes
2 cups passata or tomato sauce
1 1/2 teaspoons dried herbes de Provence, half a palmful
A few leaves fresh basil, torn
Softened butter
4 slices white bread
4 ounces Gruyere cheese, thinly sliced

Steps:

  • Preheat the oven to 425 degrees F.
  • For the soup:
  • Place the onions on a baking sheet and dress lightly with EVOO, and season liberally with the thyme and salt and pepper. Dress the garlic with EVOO, salt and pepper, and then wrap the garlic in foil and fold edges over to secure a pouch. Roast the onions until tender and golden, 30 minutes, turning once. Roast the garlic until very soft, 35 to 40 minutes.
  • Char the peppers over an open flame on the stovetop or under a hot broiler (once the onions and garlic are removed). Place the charred peppers in a bowl, cover and cool to handle. Wipe away the pepper skins with a towel. Seed and coarsely chop.
  • Cool the garlic to handle, and then squeeze the garlic cloves away from the skins and into a food processor bowl. In two batches, add the onions, garlic, peppers, stock and tomatoes. Puree until fairly smooth. Add the puree to a pot with the passata and season with the herbes de Provence and add the torn basil. Heat the soup through and simmer to thicken a little and combine flavors, about 20 minutes. Adjust the salt and pepper. Cool and refrigerate for a make-ahead meal.
  • For the grilled cheese croutons:
  • To serve, heat the soup over medium heat and preheat a griddle pan over medium heat. Butter all the bread on one side with the softened butter. Make the cheese sandwiches with the buttered sides facing out. Grill the sandwiches until golden and crisp on each side. Dice into bite-size squares. Serve the soup in shallow bowls and top each with a few grilled cheese croutons.

3 pounds plum tomatoes, halved through the stem ends

1 tablespoon unsalted butter plus 2 tablespoons melted
2 cloves garlic, minced
1 teaspoon fresh thyme leaves, minced
6 large fresh basil leaves
1/3 cup heavy cream
Sugar, for seasoning, optional
Four 1/2-inch-thick slices crusty bread
8 slices Havarti cheese

Steps:

  • Preheat a grill for cooking over medium-high heat. Lightly oil the grill grates.
  • Drizzle the cut-sides of the tomato halves with olive oil and sprinkle with salt and pepper. Place them on the grill cut-side down until they have very dark grill marks, about 8 minutes. Gently flip and grill on the skin-side to char, about 2 minutes. Lightly drizzle some olive oil on a sheet of aluminum foil. Arrange the onion rounds in one layer on the foil. Add the garlic and thyme; stir for about 1 minute. Add the tomatoes and all their juices and mash down the tomatoes with a wooden spoon to break them up a bit. Add 2 cups water, 2 teaspoons salt and some more black pepper. Bring the soup to a boil, then turn down to a simmer and cook, about 15 minutes. Take the soup off the heat, and stir in the basil leaves. Very carefully puree the soup in a blender or with a handheld stick blender. When ready to serve, bring the soup back to a simmer, and add the heavy cream. Taste for seasoning. Add more salt, if necessary. If the tomatoes are too acidic, add a little sugar to taste.
  • Meanwhile, make the grilled cheese toast: brush the melted butter on both sides of each bread slice. Place the slices on the grill; cook until nicely toasted on the underside, 3 to 5 minutes. Flip the bread and top each with 2 slices of cheese. Cover and cook to melt the cheese and toast the other side, 2 to 3 minutes. Grind a little pepper on each cheese toast. Serve immediately with the soup.

Steps:

  • Heat 4 tablespoons oil in heavy large pot over medium heat. Add onions, carrots, finely chopped garlic and bay leaf. Cover; cook until carrots are tender, stirring occasionally, about 10 minutes. 12 slices white bread
12 slices aged Cheddar cheese (6 oz)
12 large fresh basil leaves

Steps:

  • In 4-quart saucepan, heat olive oil, onion and garlic over medium heat 5 to 10 minutes, stirring frequently, until onion is soft and translucent.
  • Reduce heat to low. Add tomatoes; heat 30 minutes, stirring occasionally. Remove from heat; add remaining soup ingredients. In blender, place soup mixture. Cover; puree until smooth.
  • Spread butter on 1 side of each bread slice. Arrange 6 slices bread, buttered side down, on work surface, and place 2 slices cheese and 2 basil leaves on each bread slice. Top with remaining 6 bread slices, buttered sides up. In 10-inch nonstick skillet, cook 2 sandwiches at a time over medium heat until golden brown and cheese just melts; repeat for remaining sandwiches. Serve with soup.

1 small yellow onion, finely chopped
One 1-inch piece ginger, minced
3 cloves garlic, minced
One 28-ounce can pureed tomatoes
2 cups chicken broth
1/4 cup heavy cream
1 teaspoon garam masala
1/4 teaspoon freshly cracked black pepper
1 teaspoon kosher salt
2 tablespoons ghee
1 teaspoon cumin seeds
1/4 teaspoon red chile powder, preferably Kashmiri red chile powder
1/4 teaspoon asafetida
Cilantro Chutney (recipe follows)
8 slices sourdough bread or other crusty bread
2 cups shredded sharp Cheddar, plus more if desired
1 small red onion, thinly sliced
Mayonnaise, for spreading
1/2 cup (about a half bunch) cilantro leaves and tender stems, roughly chopped
1/2 cup mint leaves and tender stems, roughly chopped
2 tablespoons fresh lime juice, plus more if necessary
1 teaspoon kosher salt
1 teaspoon agave nectar

Steps:

  • For the soup: In a large Dutch oven, heat the oil over medium heat until shimmering, add the onion, ginger and garlic, and cook, stirring, until the onion is translucent, 3 to 4 minutes. Add the tomatoes, broth, heavy cream, garam masala, pepper and salt and stir to combine. Taste and adjust the seasoning. Cover and cook until the flavors have really deepened and the soup has thickened, 20 to 30 minutes.
  • In the meantime, make the chhonk: Melt the ghee in a butter warmer or small pan over medium heat. Add the cumin seeds and toast for a minute or less, until the cumin seeds turn fragrant and a deeper shade of brown. Remove from the heat and stir in the chile powder and asafetida. Drizzle the chhonk over the soup once it's done.
  • While the soup is cooking, make the chutney and assemble and cook your sandwiches.
  • For the sandwiches: Spread a thin layer of the chutney on four slices of the bread, then evenly distribute the cheese on top (adding more, if you'd like), followed by the onions. Close each sandwich with the remaining four slices of bread and slather the tops of the sandwiches with a generous amount of mayonnaise (this will let the sandwich brown in the skillet).
  • Heat a cast-iron skillet over medium heat. Once it's hot, add a sandwich, mayonnaise-side down. Slather the side of the sandwich that's now on top with mayonnaise. Once the sandwich is golden brown on the bottom, flip and cook until the other side is golden brown and the cheese is fully melted. While the sandwich is cooking, use a spatula to press down on the sandwich and bind the cheese and bread together. Repeat with the remaining sandwiches.
  • Slice the sandwiches in half and serve with the soup.
  • Combine all the ingredients in a food processor and process until homogeneous, adding more lime juice or water if needed to get the blades moving.

1/2 cup freshly grated Parmesan (3/4 ounce)
2 slices Muenster cheese (1 ounce)
2 slices Gruyere cheese (1 ounce)
Two 1/2-inch thick slices sourdough bread
1 tablespoon mayonnaise
1 tablespoon extra-virgin olive oil
1 tablespoon unsalted butter
1/4 cup minced shallot (1 small shallot)
1 clove garlic, grated
Pinch crushed red pepper
One 15-ounce can cherry tomatoes
1/2 cup chicken stock (not low-sodium)
1 sprig basil, plus 1 tablespoon sliced basil leaves for serving
Kosher salt and freshly ground black pepper

Steps:

  • Heat a medium nonstick skillet over medium heat. Scatter the Parmesan on a plate.
  • Sandwich the Muenster and Gruyere between the bread slices, breaking the pieces of cheese to fit inside the bread. Spread the mayonnaise on the outside of the sandwich, then dip into the Parmesan, pressing to coat evenly on both sides. Cook in the preheated skillet until the bottom is golden brown, 3 to 4 minutes. Carefully flip with a fish spatula to loosen the sandwich from the skillet and cook until the other side is golden brown and the cheese inside is melted, 3 to 4 minutes. Cut in half to serve.
  • Heat the oil and butter in a small saucepan over medium-high heat. Add the shallot and cook, stirring often, until softened, 2 to 3 minutes. Add the garlic and crushed red pepper and cook, stirring, until fragrant, 30 seconds. Stir in the cherry tomatoes, breaking them up with a potato masher. Add the chicken stock, basil sprig, 3/4 teaspoon salt and a few grinds black pepper; stir to combine. Bring to a boil, reduce to a simmer and cook for 5 minutes.
  • Discard the basil sprig and ladle the soup into a large bowl. Top with the sliced basil and serve with the Parmesan frico grilled cheese.

TOMATO SOUP
3 Tbsp butter
1 small yellow onion, chopped
1 medium carrot, diced
1 stalk(s) celery, diced
2 can(s) crushed tomatoes (28 oz each)
2 clove garlic, minced (or to taste)
1 bay leaf
1/4 c fresh basil, chopped
6 sprig(s) parsley
4 c vegetable stock
1/2 tsp dried thyme
1/2 c heavy cream
salt and pepper, to taste
GRILLED CHEESE SANDWICHES
1 loaf sliced sourdough bread (or small loaves for mini sandwiches)
sliced Fontina
sliced Gruyere
sliced aged cheddar
sliced Manchego
butter

Steps:

  • 1. Melt 2 Tbsp butter in a large pot. Saute onion, garlic, and celery until soft.
  • 2. Add tomatoes, parsley, carrots, bay leaf, and stock. Bring to a boil and immediately reduce heat to a simmer and cover the pot.
  • 3. Skim the top of any fat or froth, if desired. Remove parsley and bay leaf and blend the soup in batches of 2 cups or so or use an immersion blender.
  • 4. Add heavy cream, thyme, basil, and 1 Tbsp butter. Season to taste with salt and pepper. NOTE: Keeps well in the fridge.
  • 5. For the grilled cheese, butter one side of each slice of bread. (It's important to butter the bread and not the pan so that the toast browns more evenly.) Put an even amount of slices of each type of cheese on half of the bread slices. Top each with a second bread slice to form your sandwiches. Grill on a flat pan or use panini press or personal-size grill for about 5-7 minutes.
  • 6. Dip sandwich in soup and enjoy!!
