⅓ cup olive oil
1 teaspoon lemon-pepper seasoning, or to taste
1 teaspoon ground cumin, or to taste
1 teaspoon paprika, or to taste
1 teaspoon dried mustard, or to taste
garlic powder, or to taste
4 (4 ounce) fillets tilapia
cooking spray

Steps:

  • Mix olive oil, lemon pepper, cumin, paprika, dried mustard, and garlic powder together in a small bowl. Brush each tilapia fillet with mixture using a pastry brush. Flip; brush the other side. Cover with aluminum foil and refrigerate for 1 hour.
  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Spray a large piece of foil with cooking spray and place on the grill. Transfer tilapia onto the foil.
  • Cook fillets on the preheated grill until they're easily flaked with a fork, about 5 minutes per side. Serve.

1 pkg taco seasoning (1 1/4 oz)
3 Tbsp garlic oil (or olive oil)
4 boneless, skinless tilapia fillet (about 4.25 oz. each)
PINEAPPLE SALSA
1/2 medium pineapple
1/4 small red onion
1 serrano pepper (or jalapeno if you wish to have less heat)
2 Tbsp fresh cilantro
1/8 tsp salt
1 lime, zested and juiced

Steps:

  • 1. Heat a grill pan over medium-high heat for 5 minutes. As pan heats, peel pineapple half; cut lengthwise into two pieces and remove core. Slice each pineapple piece lengthwise into strips. Arrange strips in a single layer over grill pan; cook 2-3 minutes on each side or until grill marks appear. Set aside.
  • 2. While pineapple cooks, chop onion and cut pepper in half lengthwise, removing and discarding seeds. Chop chile and cilantro. Combine onion, pepper, cilantro and salt in a small bowl. Zest the lime to measure 1 tsp. zest and juice lime to measure 1 tbsp. juice. Add both to onion mixture and mix well.
  • 3. Whisk taco seasoning mix and oil in a bowl. Add tilapia; turn to coat. Place two tilapia fillets on grill pan. Cook 2 minutes or until grill marks appear. Turn tilapia over; cook 2 minutes or until tilapia flakes easily with a fork. Remove tilapia from pan. Wipe out pan and repeat with remaining fillets.
  • 4. As tilapia cooks, chop pineapple and add to onion mixture; mix well. Top tilapia with pineapple salsa.

1 ripe pineapple
One 2-inch piece fresh ginger, peeled
1/2 cup coarsely chopped fresh cilantro
2 tablespoons vegetable oil, plus more for brushing
2 ripe plum tomatoes, seeded and diced
1 small orange bell pepper, finely chopped
1 medium jalapeno, chopped (seeded, for less heat, if desired)
Juice of 1 lime
1/2 small red onion, finely chopped
Kosher salt
2 tablespoons soy sauce
1 tablespoon honey
Four 6-ounce skinless fillets bass or snapper

Steps:

  • Prepare a grill for medium-high heat. Cut the top from the pineapple and discard. Cut the sides off to make 4 flat planks. Finely dice the pineapple flesh (discard the core) and put it in a medium bowl.
  • Finely grate the ginger and add half to the bowl with the pineapple; reserve the rest. Add the cilantro, oil, tomatoes, bell pepper, jalapeno, lime juice and onion to the diced pineapple. Season with 1/4 teaspoon salt, then toss well and refrigerate while you make the fish.
