This is my favorite way to make tilapia, especially because Costco has such a great deal on their packaged tilapia, (at least here in Arizona.) So this recipe is not only very yummy, it is very inexpensive. In fact, you probably have all of the ingredients in your kitchen. Enjoy!

- Mince the garlic into fine pieces.
- Chop up the parsley into small pieces.
- Place the parsley and garlic into a jar with a tight fitting lid.
- Squeeze the juice into the jar.

- Put the lid on the jar and shake well.

- Combine butter, garlic and lemon zest in a small microwave-safe bowl. Microwave on Medium until the butter is melted, about 90 seconds, stirring halfway through. Sprinkle tilapia with salt and pepper; brush 1 side of each fillet with about 1 teaspoon of the butter mixture.
- Oil the grill rack by soaking a paper towel in oil and holding it with tongs to rub over the rack. Place the tilapia, buttered-sides down, on the oiled rack. Brush the exposed sides of the fish evenly with the remaining butter mixture. Cook until charred on the bottom, 3 to 4 minutes. Flip gently and continue grilling until the fish is opaque, 2 to 3 minutes. Transfer to a plate and let rest for 5 minutes.
