GRILLED THREE-CHEESE POTATOES
While this is delicious grilled, I've also cooked it in the oven at 350° for an hour. Add cubed ham to it and you can serve it as a full-meal main dish. -Margaret Hanson-Maddox, Montpelier, Indiana

Steps:
- Divided the potatoes and onions evenly between two sheets of heavy-duty foil (approximately 18 inches square), that have been sprayed with nonstick cooking spray.
- In a bowl, add the parmesan cheese, 3/4 cup each of the cheddar and mozzarella cheese; stir to combine.
- Sprinkle the cheese mixture over the potatoes.
- Sprinkle with bacon, butter cubes, chives, seasoned salt and pepper.
- Fold the ends of the foil to make a packet (I bring 2 opposite ends of the foil over the potatoes and fold or roll downward, then I roll the unsealed ends inward toward the filling and give them a good press to seal).
- Grill, covered, over medium heat for 35-40 minutes or until potatoes are tender.
- Remove from the grill, open carefully, and sprinkle with remaining cheese.
Tips:
- Choose the right potatoes: Russet potatoes are the best choice for this recipe, as they hold their shape well and have a fluffy texture. If you use a different type of potato, you may need to adjust the cooking time.
- Use a variety of cheeses: The combination of cheddar, mozzarella, and Parmesan cheeses gives this dish a rich and flavorful taste. You can use other types of cheeses if you like, but be sure to choose ones that melt well.
- Don't overcrowd the grill: When grilling the potatoes, be sure to leave enough space between them so that they can cook evenly. If you overcrowd the grill, the potatoes will steam instead of grill.
- Cook the potatoes until they are tender: The potatoes should be cooked until they are tender when pierced with a fork. If they are not cooked through, they will be difficult to eat.
- Serve the potatoes hot: These potatoes are best served hot, right off the grill. You can garnish them with chopped parsley or chives for a pop of color and flavor.
Conclusion:
Grilled Three-Cheese Potatoes are a delicious and easy-to-make side dish that is perfect for any occasion. They are cheesy, flavorful, and sure to be a hit with everyone at your table. So next time you are looking for a new side dish to try, give these potatoes a try. You won't be disappointed!
