2 tablespoons hoisin sauce
2 tablespoons light brown sugar

Steps:

  • Place chicken breasts between two layers of plastic wrap and lightly pound them to an even thickness (about 1/2 inch). Let stand at room temperature about 30 minutes.

3 (6 ounce) skinless, boneless chicken breast halves, cut into 1-inch cubes
1 medium red bell pepper, cut into 1-inch pieces
1 medium green bell pepper, cut into 1-inch pieces
1 medium onion, cut into wedges
1 medium zucchini, cut into rounds
2 tablespoons olive oil, or as needed

2 cups water
1 cup light brown sugar
1/2 head garlic, unpeeled
4 slices fresh ginger root, gently bashed to open up
2 tablespoons kosher salt
8 sprigs fresh thyme
2 cups teriyaki sauce
1/4 cup honey
1 large (1-inch) piece fresh ginger root, sliced and bashed to open up
1 head garlic, halved crosswise
1 teaspoon toasted sesame oil, plus 1/2 cup
Freshly ground black pepper
Scallion threads, for garnish
Toasted sesame seeds, for garnish

Steps:

  • Begin by making the brine. Combine the water, brown sugar, garlic, ginger, salt and thyme in a large resealable bag and swirl to dissolve the sugar. Add chicken pieces and allow to brine for 1 to 2 hours in the refrigerator.
  • Preheat grill to low-medium heat.
  • Make teriyaki glaze: In a small saucepan, over medium heat, combine teriyaki sauce, honey, ginger, garlic, and 1 teaspoon of sesame oil, and simmer until rich and slightly reduced.

1/4 cup teriyaki baste and glaze (from 12-oz bottle)
1/4 cup frozen (thawed) orange juice concentrate
2 teaspoons grated orange peel
1/2 lb uncooked chicken breast tenders (not breaded)
1 cup sugar snap pea pods
1 cup sliced fresh mushrooms (3 oz)
1 medium zucchini, cut into 1/2-inch slices (2 cups)
1/2 medium red bell pepper, cut into 1-inch pieces (3/4 cup)

Steps:

  • In small bowl, mix teriyaki glaze, orange juice concentrate and orange peel. Reserve 2 tablespoons mixture. Add chicken to remaining mixture; toss to coat. Cover and refrigerate 30 minutes.
  • Meanwhile, heat gas or charcoal grill. Place grill basket (grill "wok") over medium heat. Remove chicken from marinade; discard marinade. Place chicken in grill basket.
  • Cover and grill over medium heat 6 to 8 minutes, shaking basket or stirring chicken occasionally, until chicken is brown.
  • Add remaining ingredients to grill basket. Cover and grill 6 to 8 minutes, shaking basket or stirring occasionally, until vegetables are crisp-tender and chicken is no longer pink in center. 3 tablespoons soy sauce or 3 tablespoons tamari
2 tablespoons dry sherry
1 tablespoon oil
1/4 teaspoon ginger
1/8 teaspoon garlic powder
8 boneless skinless chicken thighs
4 boneless skinless chicken breast halves
1 large red bell pepper, cut into 8 pieces
1 medium zucchini, cut into 8 pieces
8 pieces fresh pineapple, cut in chunks

Steps:

  • In a 2-quart baking dish, combine all marinade ingredients.
  • Cut chicken thighs in half; add to marinade and cover.
  • Refrigerating at least 2 hours, turning chicken once.
  • Heat Grill.
  • Drain chicken, reserving marinade, Alternately thread chicken, bell pepper, zucchini, and pineapple into four 12-inch metal or wooden skewers.
  • (note: if using wooden skewers; soak in water for 20 minutes) When ready to grill, place kabobs on gas grill over medium heat or on charcoal grill 4-6 inches from med-high coals.
  • Cook 15-20 minutes, or until chicken is no longer pink, turning often and brushing frequently with reserved marinade.

1 c teriyaki sauce
1/4 c lemon juice, fresh
2 tsp garlic, minced
2 tsp sesame oil

Steps:

  • 1. Combine the teriyaki sauce, lemon juice, garlic and sesame oil in a large Ziploc bag. Add the chicken. Shake to coat. Place in the refrigerator for 1-12 hours to marinate, turning every so often.
  • 2. Preheat grill on medium-high heat and lightly oil the grill grate (before it gets too hot).
  • 3. Remove chicken, discarding marinade, and place on the grill.
  • 4. Grill for about 6-8 minutes on each side or until juices run clear. (This could take even less time depending on the thickness of your chicken breasts.)

6 chicken legs
6 chicken thighs
1 cup soy sauce
1 cup sugar
1 teaspoon grated gingerroot
2 garlic cloves, chopped
1/3 cup chopped green onion
1 tablespoon toasted sesame oil

  • Heat soy sauce and sugar together until sugar dissolves.
  • Remove from heat and mix in ginger, garlic, onions and sesame oil.
  • Meanwhile, par-boil the chicken until almost done.
  • Drain chicken and cool slightly.
  • Pour marinade in a zip-lock bag or marinade pan.
  • Add chicken and marinate overnight, turning occasionally.
  • Grill until heated through and skin gets a little crispy.

1 small zucchini, cut into bite-size pieces
1 large green pepper, cut into chunks

  • Place cut vegetables onto skewers in random order (you may use more or less of any particular veggie; I LOVE the onions!) Brush evenly with teriyaki marinade; sprinkle with salt, pepper and garlic powder and set aside.
  • Make about 5 slits in each chicken breast and stuff a clove of garlic inside each slit (large cloves cut in half lengthwise).
  • Brush chicken with teriyaki marinade and sprinkle both sides with salt, pepper, and garlic powder.
  • Place vegetables and chicken on foil-covered grill at medium heat; turn every few minutes.
  • When veggies are cooked through and a little blackened, remove from grill and brush with additional marinade.
  • When chicken is cooked through and no longer pink, remove from grill and brush with additional marinade.
