My family loves any kind of fried potatoes. I just love cooking with garlic and onion, so I decided to use a Bermuda ( red onion ) in the potatoes this time. bacon fat, enough to cover bottom of skillet - about 1/4 cup
6 - 7 medium russet potatoes - or really any potato would work - i just happened to use russets
1 medium bermuda onion - cut in half, then into quarters and sliced
1 Tbsp approx - creole seasoning
1 Tbsp garlic pepper seasoning
1 1/2 Tbsp chunky garlic paste - or minced garlic from jar
vegetable oil - to finish browning as needed

Steps:

  • 1. I washed and dried potatoes. Cut a slice into the tops of each and microwaved for 10 minutes. You want them cooked, but not mushy as you will be cutting them into chunks. Once cool enough to handle. Cut each potato into. Depending how big the potato is, cut each halve 2 - 3 times lengthwise, then cut into cubes crosswise. I use my iron skillet for fried potatoes. Any non stick skillet will work. Pour enough bacon fat into pan to cover bottom. Heat the fat over medium. Once good and hot, add the potatoes and onion. Sprinkle the top evenly with creole seasoning and garlic pepper. Add dollops of the garlic paste here and there. Let potatoes start browning, turning occasionally and adding vegetable oil as needed. The potatoes will soak up the initial bacon fat. So, just keep adding a little oil here and there as needed until potatoes are desired crispness. Salt if needed - I didn't.

3 tablespoons minced fresh cilantro
3/4 cup roasted garlic
Olive Oil
2/3 cup canola oil
4 cups small-diced red onion (about 2 pounds)
3 tablespoons unsalted butter
2 tablespoons sugar
5 tablespoons grated Parmesan
1/4 cup mayonnaise
Kosher salt and freshly ground black pepper

Twelve 8-inch flour tortillas
2 tablespoons balsamic vinegar

Steps:

  • Add the garlic to a skillet over low heat with a little olive oil and cook until the garlic just squishes.
  • Meanwhile, in a large skillet over medium heat, heat the canola oil. Add the onions and cook until lightly browned but not overly dark, about 5 minutes, stirring regularly. Add the butter and sugar and cook until the onions have thoroughly browned, 20 to 25 minutes.
  • Add the roasted garlic, Parmesan, mayonnaise, cilantro and salt and pepper to taste and stir to combine. Remove from the heat, transfer to a medium bowl and set aside to cool. Cover and refrigerate for at least 4 hours.
  • Reserve one-third of the mixture in the refrigerator to use to make the dipping sauce. Evenly spread the remaining mixture on the top of 11 of the tortillas. Stack the tortillas on top of one another and top with the remaining tortilla. Wrap the tortilla stack in plastic wrap and refrigerate for 12 to 24 hours to set up.
  • Preheat a grill to medium. Cut the stack into 16 wedges. Using tongs, grill each wedge on the cut sides until it's warmed and grill marks appear.
  • Mix the reserved onion mixture with the balsamic vinegar to make a dipping sauce; season to taste. Serve the wedges with the dipping sauce.

I can't think of a better way to make potatoes. These are buttery, a little crisp, and perfect with My Favorite Burgers (also on Zaar). They require Paula Deen's House Seasoning (I have provided the recipe below). You will have way more seasoning than you need for this recipe, but it's great to keep in a shaker next to your stove (it's a perfect seasoning on everything!).

1 cup salt
1/4 cup black pepper
1/4 cup garlic powder
3 golden delite potatoes, sliced into 1/4 inch coins
1/4 large sweet onion, sliced
1 1/2 tablespoons salted butter, melted
house seasoning, to taste

  • Preheat a gas grill to High.
  • On two pieces of foil (stacked), arrange potatoes in three rows overlapping the edges.
  • Top with onion slices, a generous amount of House Seasoning, and melted butter.
