1 tablespoon vegetable oil
½ cup finely chopped celery
½ cup finely chopped onion
1 (6 ounce) can lump crabmeat, drained
2 tablespoons dry sherry
½ teaspoon poultry seasoning
¼ teaspoon ground black pepper
2 ½ cups white bread cubes
1 ½ tablespoons minced garlic
6 boneless chicken thighs, with skin
½ teaspoon garlic salt
½ teaspoon onion powder

Steps:

  • Preheat a grill for medium heat.
  • Lay the chicken thighs out skin side down on a clean surface. Spread an even layer of the crab mixture onto each one. Roll up chicken and secure with toothpicks.
  • Place the stuffed thighs seam side down onto the grill, and season with garlic salt and onion powder. Cover, and cook for 20 to 30 minutes, turning occasionally for even cooking. Chicken is done when juices run clear when pierced with a fork.

Tips:

  • Use a meat thermometer to ensure the chicken is cooked through. The internal temperature of the chicken should reach 165°F (74°C).
  • If you don't have a meat thermometer, you can check if the chicken is cooked by cutting into it. The juices should run clear, not pink.
  • Let the chicken rest for a few minutes before serving. This will help the juices redistribute and make the chicken more tender.
  • Serve the chicken with your favorite sides. Some good options include roasted vegetables, mashed potatoes, or rice.
  • Get creative with your stuffing. You can use any combination of ingredients that you like. Some popular options include bread crumbs, herbs, cheese, vegetables, and nuts.
  • Experiment with different cooking methods. You can grill, bake, or fry the chicken. Each method will give you a slightly different flavor and texture.

Conclusion:

Grilled stuffed chicken thighs are a delicious and versatile dish that can be enjoyed by people of all ages. They are perfect for a weeknight dinner or a special occasion. With so many different ways to prepare them, you're sure to find a recipe that you love. So fire up your grill and get cooking!
