Gorgonzola Cream Sauce, recipe follows
1 tablespoon butter
1 shallot, minced
1 cup heavy cream
1/4 pound Gorgonzola
Salt and freshly ground black pepper

Steps:

  • Heat a grill pan to medium heat.
  • Season the steak liberally with salt and pepper. Cook for 6 minutes on each side for medium rare.
  • Remove from heat, cover with foil to make a tent. Rest for 5 minutes before slicing steak. Cut into 1/8-inch thick slices. Transfer to a platter and ladle on Gorgonzola Cream Sauce.

3 garlic cloves (crushed/minced)

1½ cups cream
1 tsp lemon juice
100 g (3½oz) Gorgonzola (crumbled )

4 rib-eye steaks

  • To make the sauce, melt the butter in a pan set over medium-low heat.

1 shallot, minced
1 cup heavy cream
1/4 pound gorgonzola cheese, crumbled

1/4 cup paprika
1/4 teaspoon onion powder
2 pounds large asparagus, trimmed
