1-2 lb sirloin steak strips or steak (steak tips)
1/2 c Worcestershire sauce
1/4 c red wine vinegar
1/2 c olive oil, extra virgin
4 tsp chopped garlic
1/2 tsp rosemary, dried
1/4 tsp marjoram
1/4 tsp thyme, dried
1/2 tsp basil
1/4-1/2 tsp red pepper flakes optional
1 1/2 Tbsp cracked black pepper
1 Tbsp honey (optional)
salt to taste

Steps:

  • 1. Place all ingredients but steak in a bowl. Stir together well. Place steak in bowl or pour into a large Ziploc-style bag.
  • 2. Place steak in bag with marinade. Move meat around to distribute it evenly. Place in fridge for 3 to 6 hours. Flip halfway through marinating.
  • 3. Remove meat from bag. Salt both sides of meat. Let steak sit at room temperature for 30 minutes before cooking.
  • 4. Grill outdoors or broil on hot grill pan under broiler. outdoor grill heat to high. Cook about 4 minutes on each side for strips. Strips being 3/4-1 inch thick Will be cooked medium. This cut is best served medium or rare. Salt to taste and serve!

3 tablespoons dark brown sugar, packed
5 garlic cloves, minced
1 tablespoon tomato paste
1 tablespoon paprika (I reduced to about 2/3)
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper (I reduced to 1/8)
1 (2 1/2-pound) beef flap meat*
Flap meat is sold as whole steaks, strips, and pieces. For even pieces, buy a whole steak of uniform size and cut it up yourself.

Steps:

  • Whisk soy sauce, oil, sugar, garlic, tomato paste, paprika, pepper, and cayenne together in bowl until sugar dissolves; transfer to zipper-lock bag. Pat beef dry with paper towels. Prick beef all over with fork and cut into 2 1/2-inch pieces. Add meat to bag with soy mixture and refrigerate for 2 to 24 hours, turning occasionally.
