1/2 cup reduced-sodium teriyaki sauce
2 tablespoons lemon juice
2 tablespoons olive oil
2 tablespoons Worcestershire sauce
1 beef flank steak (1 pound)
1 round loaf Italian bread (about 2 pounds), unsliced
4 plum tomatoes, chopped
4 green onions, thinly sliced
1/4 cup Greek olives, coarsely chopped
1/4 cup sliced pepperoni
1 tablespoon thinly sliced fresh basil leaves
2 tablespoons plus 1/4 cup prepared Italian salad dressing, divided
2 cups fresh arugula

Steps:

  • Place first 4 ingredients in a large bowl or shallow dish. Add steak and turn to coat. Refrigerate, covered, 8 hours or overnight., Remove steak, discarding marinade. Grill steak, covered, over medium heat or broil 4 in. from heat until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°), 6-8 minutes per side. Cool completely., Cut bread loaf horizontally in half. Hollow out both halves, leaving a 1/2-in. shell (save removed bread for another use). Cut steak across the grain into thin slices. 2 tablespoons ketchup
2 tablespoons whole grain Dijon mustard

2 tablespoons horseradish, drained

4 hoagie rolls
3 cups shredded lettuce

  • 1. Mix the mayonnaise, ketchup, mustard, molasses and horseradish in a small bowl and refrigerate for at least 30 minutes. 2. 1 pound skirt steak
1 red onion, sliced into 1/2-inch-thick rounds
8 slices crusty bread
Arugula

Steps:

  • In a large baking dish, whisk together mustard, 1 tablespoon vinegar, and 2 tablespoons oil. Season with salt and pepper. Add steak and turn to coat; let sit 15 minutes at room temperature. 2 large green plantains, about 10 inches long and 2-3 inches wide
1 tablespoon vegetable oil
salt
fresh ground black pepper
1 cup breadcrumbs
1/2 teaspoon cayenne pepper
1/2 teaspoon black pepper
1 teaspoon salt
1/4 cup paprika
1 teaspoon dried oregano
1 teaspoon dried thyme
1 tablespoon garlic powder
1 tablespoon onion powder
24 ounces skirt steaks
6 ounces salted butter, melted
1 cup cajun spices
1 cup mayonnaise
1 teaspoon chipotle chili sauce
1/2 cup all-purpose flour
1 1/4 teaspoons salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1 pinch cayenne pepper
1 large Spanish onion
2 cups shredded Mexican blend cheese

Steps:

  • Peel plantains, and cut in half widthwise, then cut in half lengthwise.
  • In a large pot or deep-fryer, preheat vegetable oil to 325°F.
  • Add the plaintains to the oil, and fry for 5 minutes.
  • Remove them and place on a flat surface.
  • Increase heat to 375°F.
  • With a metal flat spatula, press down onto the plantains until they are flat, less than 1/4 of an inch.
  • Using a knife to help scrape the plantain off the spatula, deep-fry the plantains again for 3 minutes.
  • Pull them out and season with salt and pepper.
  • Combine the breadcrumbs, cayenne pepper, black pepper, salt, paprika, oregano, thyme, garlic powder, onion powder to create Cajun spice.
  • Dip each piece of steak into 4 ounces melted butter and then into the Cajun spice, covering both sides of the steak.
  • Spread the remaining melted butter onto a flat top or metal skillet, place the steak on top and cook on both sides until medium or preferred degree of doneness.
  • After the steak is done, slice it thinly against the grain.
  • Combine the mayonnaise and chipotle sauce to make the Chipotle Mayonnaise.
  • Onions: In a mixing bowl, combine flour, salt, pepper, garlic powder, onion powder, and a pinch of cayenne pepper.
  • Slice the onion very thinly.
  • Place in the flour mixture. Squeeze the slices of onion as you are mixing them with the flour mixture. Shake off the excess flour.
  • Drop a little bit of onions into 375 F oil at a time to prevent sticking together. Cook for 1 minute and 30 seconds or until golden brown. Drain on paper towels.
  • Build a sandwich by layering 1 fried plantain, 1 tbsp chipotle mayonnaise (spread coast to coast on bottom plantain), sliced steak, and 1/3 cup of shredded cheese. Place under the broiler for 1 or 2 minutes or use the microwave to melt the cheese. Then continue layering 1/2 cup of fried onion, 1 more tbsp chipotle mayonnaise, spread coast to coast on top plantain.
  • Cut sandwich in half before serving.

1-2 lb thinly sliced sirloin
1 loaf, jalapeno cheese bread, sliced
8 slice asadero cheese, or your favorite cheese, sliced
1 onion, sliced
1 portabello mushroom, sliced
butter
skewers, if using wooden ones, soak in water for about an hour
1 tsp granulated garlic (or powder)
1 tsp granulated onion (or powder)
1 tsp cracked black pepper, pinch of coarse sea salt
mix spices together, sprinkle over meat & veggies

Steps:

  • 1. Sit cheese out to come to room temp. It will melt quicker this way. Slice bread and butter both sides. (Ignore the burritos in this photo, that is tomorrow's lunch).
  • 2. Cut steak into slices, season and place on skewers. Slice onion & mushrooms, season, toss with olive oil.
  • 3. Place veggies on foil grill pan and cook till tender. Grill skewers to med-rare, or your steak preference.
  • 4. When steak & veggies done, remove steak from skewers, chop into bite size pcs. Layer sandwiches: bread,cheese, steak, veggies, cheese, and bread again. Grill on each side till cheese melts. You may need to place on foil after grilling both sides so that cheese will melt without burning bread.

2 slice roast beef, from the deli or as much as you like
1/2 small onion (sliced) or to taste

Steps:

  • 1. Heat the oil in a pan. Add the onion and saute until tender, about 5-7 minutes. Add the bell pepper and saute until tender, about 5 minutes.

1-1 1/2 lb shaved steak or top loin beef chuck sliced thinly
1 red pepper, thinly sliced
1 green pepper,thinly sliced
1/2 large sweet onion, thinly sliced
3 garlic cloves, smashed and minced
olive oil,enough to stir fry steak,peppers, and onions
red wine to taste
salt and pepper to taste
2 Tbsp soy sauce, low sodium

10 multi grain folded flats
