3 cloves garlic, minced
2 chipotle peppers in adobo sauce, chopped
1 lemon, juiced
1 tablespoon olive oil
1 tablespoon paprika
1 teaspoon chopped fresh cilantro
1 teaspoon kosher salt
½ teaspoon cracked black pepper
½ teaspoon crushed red pepper flakes
¼ teaspoon cayenne pepper
2 pounds uncooked medium shrimp, peeled and deveined
wooden or metal skewers

Steps:

  • Mix together the garlic, chipotle peppers, lemon juice, olive oil, paprika, cilantro, kosher salt, black pepper, red pepper flakes, and cayenne pepper in a bowl. Stir in the shrimp, and mix well to thoroughly coat. Marinate for 30 minutes in refrigerator.
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • Remove the shrimp from the marinade, and discard excess marinade. Thread about 5 shrimp per skewer, and grill on the preheated grill until the shrimp turn pink and opaque in the center, about 2 minutes per side.

CILANTRO CREAM SAUCE:
1 cup sour cream
1/3 cup minced fresh cilantro

1-1/2 teaspoons grated lime zest

2 tablespoons lemon juice, about 1/2 lemon

1 rib celery from heart with leafy tops, finely chopped

1/2 lb tomatoes, cut in 1/2 lengthwise
1 unpeeled white onion, cut in 1/2 lengthwise (about 1 cup)
10 garlic cloves
7 ounces chipotle chiles in adobo
1 tablespoon cumin
1 tablespoon coriander
1/2 cup Kahlua
4 tablespoons light brown sugar
3 tablespoons corn oil
1/2 cup lime juice
salt, to taste
1 1/2 lbs deveined shrimp, with shells on, rinsed and drained
1/4 cup chopped cilantro
lime wedge

Steps:

  • Soak skewers in water for 30 minutes.
  • Preheat the oven on a high broil setting.
  • When hot, place tomatoes onions (cut side down) and garlic on an oiled cookie sheet.
  • Broil until charred, about 5-6 minutes for garlic and 10 minutes for onions and tomatoes.
  • Core tomatoes and cut into chunks.
  • Peel onions and garlic; coarsely chop all and add to blender with the next 5 (chipotles through brown sugar) ingredients.

  • Sear 1-2 minutes on each side, basting with glaze before you flip the shrimp.

3 tablespoons honey

1 1/4 cups Seafood Marinade
4 tablespoons extra-virgin olive oil
2 garlic cloves, minced
1 tablespoon minced canned chipotle chilies*
1/2 teaspoon dried oregano

  • Place shrimp in large bowl. Add marinade and toss to coat. Cover and refrigerate 15 minutes. Drain shrimp; discard marinade. Return shrimp to bowl.
  • Puree 2 tablespoons olive oil, 1 garlic clove, chipotle chilies, and dried oregano in processor until smooth. Transfer chipotle mixture to bowl with shrimp; toss to coat.
  • Heat remaining 2 tablespoons olive oil in heavy large skillet over medium-high heat. Add remaining garlic clove and sauté 1 minute. Add shrimp with chipotle mixture; sauté until shrimp are cooked through, about 5 minutes. Season to taste with salt and pepper. Transfer to serving bowl.
