GRILLED FISH SANDWICHES FOR TWO

Grilled Fish Sandwiches for Two image

If you are in a hurry to get dinner on the table, these grilled fish sandwiches will be ready in less time than it takes to preheat the grill! To make things even quicker, I used a purchased remoulade sauce, but there are some great recipes for remoulade here on the site. We like simple toppings of lettuce and sliced tomatoes, but feel free to add your favorite sandwich toppings, if you prefer!

Time 20m

Yield 2

Number Of Ingredients 9

1 tablespoon unsalted butter
½ teaspoon Creole seasoning
2 (6 ounce) fillets cod fillets
½ teaspoon smoked paprika
2 tablespoons vegetable oil
2 each sub-style sandwich rolls, split
6 leaves romaine lettuce
4 slices tomato
2 tablespoons remoulade sauce, or to taste

Steps:

  • Clean the grates of an outdoor grill, and preheat to 375 degrees F (190 degrees C).
  • Melt butter and stir in Creole seasoning and smoked paprika.
  • Pat fillets dry with a paper towel, and brush each side with the seasoned butter mixture.
  • Carefully oil grill grates and place fillets on the grill for 1 minute. Gently rotate the fish on the grate 60 to 90 degrees, to make grill marks, and continue grilling for 1 more minute. With a fish turner, turn fillets over and grill for 1 minute. Rotate and grill for 1 more minute. Fish is done when it flakes easily with a fork and an instant-read thermometer inserted into the center reads 145 degrees F (63 degrees C).
  • Open sandwich rolls and place Romaine leaves and grilled fish inside. Top with tomato slices. Add remoulade sauce and serve.

The grilled seafood makes this recipe. I had enjoyed shrimp grilled, but never lobster. I now realize that's the way to go! It adds such a great flavor.

Number Of Ingredients 16

1 Tbsp oil
1 lobster tail approx 6 oz
16 shrimp - medium to large size
1 c cook crab meat - picked over for shells
1/2 c mayonnaise - real mayo and not miracle whip
1/4 c shredded cheddar cheese - medium or sharp
3 Tbsp chopped red or green onion - your choice
1/4 c chopped celery
1/4 c chopped cucumber
1/2 tsp dried dill weed
1 Tbsp lemon juice - fresh is best if you have it
1/2 tsp salt
1 Tbsp melted butter
4 hot dog buns
crisp lettuce
1 dash(es) hot sauce - if desired

Steps:

  • 1. Place the lobster and the shrimp in a bowl and pour oil over all. Mix with hands until the seafood is coated. Place the lobster and shrimp on a hot grill and cook until done. Remove from grill and cool. When cooled, removed shells.
  • 2. Chop the lobster and shrimp into small pieces and place in medium bowl. Add crab and stir to mix. Add remaining ingredients except butter, buns, lettuce and hot sauce and mix well. Add mayonnaise until you get a good coating but do not saturate. Use more mayo if you need to.
  • 3. Cover and chill on ice or overnight in the fridge. Just before serving lightly brush the buns with butter and toast in a skillet. Line the buns with lettuce and then heap with the seafood mix and top with a dash of hot sauce if desired.

Tips:

  • For the best flavor, use fresh, high-quality seafood.
  • If you don't have a grill, you can cook the seafood in a grill pan or on a stovetop.
  • Be careful not to overcook the seafood, as it will become tough and chewy.
  • To make the perfect tartar sauce, use a combination of mayonnaise, pickles, onions, and herbs.
  • Serve the seafood sandwiches on toasted bread or rolls with your favorite sides, such as coleslaw, potato salad, or French fries.

Conclusion:

Grilled seafood sandwiches are a delicious and easy-to-make meal that is perfect for summer gatherings. With a variety of seafood options and toppings to choose from, there is sure to be a grilled seafood sandwich that everyone will enjoy.
