400 g (14oz) salmon fillets (I prefer using skin-on salmon. Ask your fishmonger to remove any bones.)
2 tbsp olive oil
2 tbsp lemon juice
1 tsp parsley (finely chopped)
1 tsp oregano
1 tsp salt
½ tsp black pepper
½ cup capers (chopped)
1 tbsp olive oil
1 lemon (zest + juice )

1 tsp chives (chopped)
salt and pepper (to taste)

Steps:

  • Combine the olive oil, lemon juice, parsley, oregano, salt and pepper.

  • Fold up a few sheets of paper towels then dip into oil and with tongs, rub onto the grill grates.
  • Remove the salmon from the marinade and place skin-side down on the grill. Allow to cook for 3-4 minutes or until the skin is golden and crisp.

Tips:

  • Choose the right salmon: Opt for wild-caught salmon over farmed salmon for a healthier and more sustainable choice.
  • Select thick salmon fillets: Thicker fillets will hold up better on the grill and prevent overcooking.
  • Use a cedar plank: Cedar planks impart a delicate smoky flavor to the salmon and prevent it from sticking to the grill grates.
  • Season the salmon simply: A simple seasoning of salt, pepper, and lemon-caper sauce will allow the natural flavor of the salmon to shine through.
  • Grill the salmon over medium heat: This will prevent the salmon from overcooking and drying out.
  • Cook the salmon until it reaches an internal temperature of 145°F (63°C): Use a meat thermometer to ensure that the salmon is cooked through.
  • Let the salmon rest before serving: This will allow the juices to redistribute throughout the fish, resulting in a more tender and flavorful bite.

Conclusion:

Grilled salmon with lemon-caper sauce is a simple yet delicious dish that can be enjoyed for lunch or dinner. The combination of grilled salmon, tangy lemon-caper sauce, and fresh herbs creates a flavorful and healthy meal that is sure to impress. Whether you are a seasoned grill master or a beginner, this recipe is a great way to enjoy the fresh flavors of summer.
